Thai Noodle Salad with Spicy Peanut Sauce

This cold Thai Noodle Salad with Spicy Peanut Sauce is easy to make and loaded with flavor! They are also great for meal prepping lunches for the week!

Ingredients

Units Scale

For the Thai Noodle Salad:

  • 8 oz Pad Thai Rice Noodles
  • 1 cup shredded Red Cabbage
  • 1 cup shredded Carrots
  • 1/2 Red Bell Pepper chopped
  • Cashews and Sesame Seeds for topping

For the Spicy Peanut Sauce:

  • 1/2 cup Peanut Butter
  • 2 Tbs Tamari
  • 2 Tbs Honey
  • 2 Tbs Rice Vinegar
  • 1 tsp Chili Garlic Sauce, you can add more if you like it spicier
  • 1 Tbs Sesame Oil
  • 1 tsp grated Ginger
  • Juice from 1 Lime
  • 1/2 cup water (more or less if you like it more thick or more runny)

Instructions

  1. Cook Pad Thai noodles as directed, then rinse with cold water and drain
  2. In a large bowl add everything for the Pad Thai Noodle bowls
  3. In a small bowl whisk together all the ingredients for the Spicy Peanut Sauce
  4. Pour your desired amount of the Peanut Sauce over the noodle bowl and mix well
  5. Top with Cashews and Sesame Seeds
  6. Enjoy!

Notes

The Spicy Peanut Sauce will make about 1 1/2 cups. You can keep the remainder in an air tight container in the fridge for up to a week if you don’t use it all.
