This cold Thai Noodle Salad with Spicy Peanut Sauce is easy to make and loaded with flavor! They are also great for meal prepping lunches for the week!

Thai Noodle Salad

I’ve been doing a lot of meal prepping lately and this has been one of my favorite meals to make for weekday lunches or dinner.

I mean, what’s not to love? It’s loaded with rice noodles, veggies and a homemade spicy peanut sauce for the win!

Ingredients for the Thai Noodle Salad

  • 8 oz Pad Thai Rice Noodles
  • 1 cup shredded Red Cabbage
  • 1 cup shredded Carrots
  • 1/2 Red Bell Pepper chopped
  • Cashews and Sesame Seeds for topping

Ingredients for the Spicy Peanut Sauce

  • 1/2 cup Peanut Butter
  • 2 Tbs Tamari
  • 2 Tbs Honey
  • 2 Tbs Rice Vinegar
  • 1 tsp Chili Garlic Sauce, you can add more if you like it spicier
  • 1 Tbs Sesame Oil
  • 1 tsp grated Ginger
  • Juice from 1 Lime
  • 1/2 cup water (more or less if you like it more thick or more runny)

Why you’ll love this Thai Noodle Salad Recipe

It’s easy to make, great for meal prepping, filling and loaded with flavor!

How to make Thai Noodle Salad

  1. Cook Pad Thai noodles as directed, then rinse with cold water and drain.
  2. In a large bowl add everything for the Pad Thai Noodle bowls.
  3. In a small bowl whisk together all the ingredients for the Spicy Peanut Sauce.
  4. Pour your desired amount of the Peanut Sauce over the noodle bowl and mix well.
  5. Top with Cashews and Sesame Seeds if desired.

What are the best noodles to buy?

I prefer using dried rice noodles since they are gluten free. I used wider pad Thai noodles for this recipe, but the thinner noodles work great too!

Tip: Sometimes the noodles get stuck together once they’ve been drained if they sit too long. If this happens, just rinse under cold water and gently separate them with your fingers.

Can I make this salad ahead of time?

Yes this can be made ahead of time. This will keep well in the fridge for up to 5 days.

Notes

The Spicy Peanut Sauce will make about 1 1/2 cups. You can keep the remainder in an air tight container in the fridge for up to a week if you don’t use it all.
