I’ve been trying to do more meal prepping lately because the weeks seem to be getting busier and busier the closer it gets to my sons graduation.
I still can’t believe I’m going to have a high school graduate in a few weeks. Make time stop!
But I’m sure you are here for this yummy recipe, so I’m not going to ramble on anymore.

I’ve been trying to use up a lot of my pantry foods that are expiring soon. I had a package of Rice Pad Thai Noodles, but didn’t feel like making Pad Thai.
I wanted something cold like a noodle salad, so this ended up being my creation!
I was trying to figure out what kind of dressing to make and then I remembered I did a recipe many years ago, (one of the first recipes on the blog in fact) for a Spicy Peanut Sauce.

So that is what I went with and it totally complimented this noodle bowl! It worked out perfectly too because I was able to update my photos from that post, which desperately needed updating!

Ingredients
For the Pad Thai Noodle Bowls:
- 8 oz Pad Thai Rice Noodles
- 1 cup shredded Red Cabbage
- 1 cup shredded Carrots
- 1/2 Red Bell Pepper chopped
- Cashews and Sesame Seeds for topping
For the Spicy Peanut Sauce:
- 1/2 cup Peanut Butter
- 2 Tbs Tamari
- 2 Tbs Honey
- 2 Tbs Rice Vinegar
- 1 tsp Chili Garlic Sauce, you can add more if you like it spicier
- 1 Tbs Sesame Oil
- 1 tsp grated Ginger
- Juice from 1 Lime
- 1/2 cup water (more or less if you like it more thick or more runny)
Instructions
- Cook Pad Thai noodles as directed, then rinse with cold water and drain
- In a large bowl add everything for the Pad Thai Noodle bowls
- In a small bowl whisk together all the ingredients for the Spicy Peanut Sauce
- Pour 1/2 cup of the Peanut Sauce over the noodle bowl and mix well
- Add more sauce if desired
- Top with Cashews and Sesame Seeds
- Enjoy!
Notes
The Spicy Peanut Sauce will make about 1 1/2 cups. You can keep the remainder in an air tight container in the fridge for up to a week.
