This Blackened Chicken Caesar Salad will be your new favorite go to lunch or dinner! The Chicken is perfectly seasoned and stays so tender and juicy on the inside.

I’ve been on a bit of a salad kick lately. I think I’ve had a salad almost everyday for the past few weeks! I absolutely love it though because I can change it up to something new everyday!

When it’s hot out, all I want to eat is something light and healthy. It’s been about 100 degrees most days here in Florida, whew! So yeah, definitely salad weather!

I’ve also been obsessed lately with my homemade blackened seasoning, which I have been using for fish, shrimp, steak, and of course this chicken!

Blackened Chicken Caesar Salad with a fork

I make it ahead of time and store it in a baby food mason jar (affiliate link) in my spice cupboard. All you need to make the seasoning is:

  • 2 Tbs ground Smoked Paprika
  • 1 tsp ground Cayenne
  • 1 tsp Garlic Powder
  • 1 tsp Onion Powder
  • 1/2 tsp dried Oregano
  • 2 tsp Sea Salt
  • 1 tsp Black Pepper

You can of course make a bigger batch than this if you want to always have some on hand. Everyone that’s tried my blackened seasoning say it’s the best they have ever had!

That just warms my heart. 🙂

Blackened Chicken Caesar Salad

Now the homemade Caesar dressing can be make ahead of time as well. It will keep for up to a week in an airtight container in the fridge. All you need for the dressing is:

  • 1 large Garlic Clove
  • 4–6 Anchovies plus more for topping if desired
  • 2 Tbs fresh Lemon Juice (approximately 1 Lemon)
  • 1 tsp Dijon Mustard
  • 1/2 tsp Sea Salt
  • 1/2 tsp Black Pepper
  • 1/2 cup Shredded Parmesan
  • 1/4 cup EVOO

Just blend it all together in a food processor until smooth. Taste and add more of any of the ingredients to your liking.

With everything prepped ahead of time, it makes it super easy to throw this Caesar salad together on a busy weeknight!

Oh and I almost forgot, I like to make my own croutons as well since I can’t find any good gluten free brands to use. My favorite gluten free baguette is from Schar. (affiliate link)

Just slice it into bite size pieces and bake until crispy! I like mine plain for this salad because the blackened seasoning on the chicken gives it such a nice flavor. But if you wanted to season your croutons, go right ahead!

Ingredients

For the Caesar Dressing:

  • 1 large Garlic Clove
  • 4–6 Anchovies plus more for topping if desired
  • 2 Tbs fresh Lemon Juice (approximately 1 Lemon)
  • 1 tsp Dijon Mustard
  • 1/2 tsp Sea Salt
  • 1/2 tsp Black Pepper
  • 1/2 cup Shredded Parmesan
  • 1/4 cup EVOO

For the Croutons:

  • 1 Baguette – I used Schar gluten free brand

For the Blackened Seasoning:

  • 2 Tbs ground Smoked Paprika
  • 1 tsp ground Cayenne
  • 1 tsp Garlic Powder
  • 1 tsp Onion Powder
  • 1/2 tsp dried Oregano
  • 2 tsp Sea Salt
  • 1 tsp Black Pepper

For the Salad:

  • 2 Boneless Skinless Chicken Breasts
  • 1 Large Head Romaine Lettuce torn into bite size pieces
  • 1/2 cup shaved Parmesan Cheese

Instructions

  1. Preheat oven to 400 degrees Fahrenheit
  2. Slice Baguette into 1 inch bite size pieces
  3. Place Baguette slices on a baking sheet and bake 4 minutes each side until crispy
  4. While Baguette is baking prepare the dressing
  5. In a small food processor add Garlic, Anchovies, Lemon Juice, Dijon, 1/2 tsp Salt, 1/2 tsp Pepper, 1/2 cup Parmesan, and 1/4 cup EVOO
  6. Blend until smooth, taste and add more salt or pepper if desired
  7. Set dressing aside
  8. Preheat grill to approximately 350 – 400 degrees Fahrenheit
  9. Mix all of the Blackened Seasoning together and sprinkle evenly over all sides of the chicken
  10. Note you probably won’t need all of the seasoning, you can store the rest in an air tight container along with your other spices and use for another time
  11. Place Chicken on the grill and cook 8-10 minutes each side or until internal temp is 165F
  12. Remove Chicken and place on a platter or cutting board and let it rest for 10 minutes
  13. Add Romaine to a large salad bowl
  14. Slice Chicken and add to salad
  15. Toss with the Caesar Dressing
  16. Add in the shaved Parmesan and Croutons
  17. Enjoy!

Notes

Depending on the size of your Chicken Breasts can vary the cook time. Always check the internal temp with a meat thermometer to ensure it’s cooked to 165F.
