Paleo Blueberry Muffins (Sugar Free)

Ingredients

  • 2 1/2 cups Almond Flour
  • 3/4 tsp Baking Soda
  • 1/2 tsp Sea Salt
  • 3 Eggs
  • 1/3 cup Unsweetened Apple Sauce
  • 2 Tbs Honey
  • 2 Tbs Coconut Oil melted
  • 1 tsp White Vinegar
  • 1 tsp Vanilla Extract
  • 1 cup Fresh Blueberries
  • non-stick cooking spray

Instructions

  1. Preheat oven to 350 degrees.
  2. Spray 12 cup muffin pan with non-stick cooking spray.
  3. In large bowl add Almond Flour, baking soda, and salt.
  4. Mix well.
  5. In medium bowl add eggs, applesauce, honey, coconut oil, vinegar, and vanilla.
  6. Mix well.
  7. Add the wet ingredients to the dry ingredients and mix well.
  8. Fold in Blueberries.
  9. Add mix to muffin tin.
  10. Bake 18 minutes.
  11. Let cool in pan for 10 minutes before serving.
  12. Makes 12 muffins.
  13. Enjoy!
