2 1/2 lbs Parsnips chopped into 1 inch pieces
1 Whole bulb of Garlic peeled (about 10 cloves)
1/4 cup + 2 Tbs EVOO divided
1/4 cup Cashew milk or milk of your choice
2–3 Tbs freshly chopped Chives
Sea Salt and Pepper to taste
Cooking spray
Instructions
Preheat oven to 400 degrees Fahrenheit
Spray a large sheet pan with cooking spray
Add Parsnips and Garlic
Drizzle 2 Tbs EVOO over everything
Sprinkle Sea Salt and Pepper over Parsnips
Roast in the oven 30 minutes or until a fork pierces easily through the thickest part of the Parsnips
Place Parsnips and Garlic in a food processor or high speed blender (you may need to work this in batches depending on the size of your food processor)
Add 1/4 cup EVOO, Cashew Milk, and Chives
Blend until creamy (like mashed potato consistency), you may need to add more EVOO or Milk depending on how creamy you want these
