Roasted Whipped Parsnips

These Roasted Whipped Parsnips are the perfect side dish when you want to replace your mashed potatoes. I roasted them first, then whipped them to creamy perfection!

Roasted Whipped Parsnips

This was actually my first time trying Parsnips, and I must say the flavor exceeded my expectations! Honestly I had no idea what they were going to taste like. They look like giant carrots, so I thought maybe they would taste similar to them. Nope!

I loved the flavor, it has a slightly sweet taste similar to a sweet potato, but not as sweet. I have seen recipes where they remove the skin on the outside, but I decided to leave it on which is why it has a darker color.

So if you wanted them more white to resemble mash potatoes, then just peel them before roasting. 

Roasted Whipped Parsnips in a food processor

Here’s what you need to make this yummy side dish:

  • 2 1/2 lbs Parsnips chopped into 1 inch pieces
  • 1 Whole bulb of Garlic peeled (about 10 cloves)
  • 1/4 cup + 2 Tbs EVOO divided
  • 1/4 cup Cashew milk or milk of your choice
  • 2-3 Tbs freshly chopped Chives
  • Sea Salt and Pepper to taste
  • Cooking spray
Roasted Whipped Parsnips in a bowl

Preheat your oven to 400 degrees Fahrenheit. Spray a large sheet pan with cooking spray. Add Parsnips and Garlic, then drizzle 2 Tbs EVOO over everything. Sprinkle Sea Salt and Pepper over the Parsnips.

Roast in the oven 30 minutes or until a fork pierces easily through the thickest part of the Parsnips. Place Parsnips and Garlic in a food processor or high speed blender (you may need to work this in batches depending on the size of your food processor).

Add 1/4 cup EVOO, Cashew Milk, and Chives. Blend until creamy (like mashed potato consistency), you may need to add more EVOO or Milk depending on how creamy you want these.

Taste and add more Salt or Pepper if needed. Top with additional Chives if desired.

I love to serve this with Roasted Cornish Game Hens, so good!
