Slow Cooker Hawaiian Chicken Tacos

Ingredients

  • 2 boneless skinless Chicken Breast
  • 1 cup chopped Sweet Onion
  • 1/2 cup chopped Orange Pepper
  • 1 cup chopped Red Pepper
  • 1/2 cup chopped Green Pepper
  • 1 15oz can Black Beans drained and rinsed
  • 1/2 cup chopped Pineapple + 1/2 cup for topping after cooked
  • 3/4 cup Pineapple Salsa
  • 1/2 cup frozen Corn
  • 1/4 cup Lime juice (juice from about 2 limes)
  • 1 Tbs Chili Powder
  • 1/4 tsp Garlic Powder
  • 1/4 tsp Onion Powder
  • 1/4 tsp Oregano
  • 1 1/2 tsp Cumin
  • 1/4 tsp Sea Salt
  • 1/4 tsp Pepper

Instructions

  1. In Crockpot place Chicken, Onion, Peppers, Beans, 1/2 cup Pineapple, Salsa, Corn, and Lime juice.
  2. Sprinkle all of the seasonings over everything.
  3. Give it a little stir.
  4. Place lid on Crockpot and cook on High setting for 4 hours.
  5. Shred Chicken with forks and stir to combine.
  6. Serve with Corn Tortillas and top with remaining Pineapple.
  7. Enjoy!
