Blackened Chicken Caesar Salad

This Blackened Chicken Caesar Salad will be your new favorite go to lunch or dinner! The Chicken is perfectly seasoned and stays so tender and juicy on the inside.

Ingredients
  

For the Caesar Dressing:

  • 1 large Garlic Clove
  • 4 –6 Anchovies plus more for topping if desired
  • 2 Tbs fresh Lemon Juice approximately 1 Lemon
  • 1 tsp Dijon Mustard
  • 1/2 tsp Sea Salt
  • 1/2 tsp Black Pepper
  • 1/2 cup Shredded Parmesan
  • 1/4 cup EVOO

For the Croutons:

  • 1 Baguette - I used Schar gluten free brand

For the Blackened Seasoning:

  • 2 Tbs ground Smoked Paprika
  • 1 tsp ground Cayenne
  • 1 tsp Garlic Powder
  • 1 tsp Onion Powder
  • 1/2 tsp dried Oregano
  • 2 tsp Sea Salt
  • 1 tsp Black Pepper

For the Salad:

  • 2 Boneless Skinless Chicken Breasts
  • 1 Large Head Romaine Lettuce torn into bite size pieces
  • 1/2 cup shaved Parmesan Cheese

Instructions
 

  • Preheat oven to 400 degrees Fahrenheit
  • Slice Baguette into 1 inch bite size pieces
  • Place Baguette slices on a baking sheet and bake 4 minutes each side until crispy
  • While Baguette is baking prepare the dressing
  • In a small food processor add Garlic, Anchovies, Lemon Juice, Dijon, 1/2 tsp Salt, 1/2 tsp Pepper, 1/2 cup Parmesan, and 1/4 cup EVOO
  • Blend until smooth, taste and add more salt or pepper if desired
  • Set dressing aside
  • Preheat grill to approximately 350 - 400 degrees Fahrenheit
  • Mix all of the Blackened Seasoning together and sprinkle evenly over all sides of the chicken
  • Note you probably won't need all of the seasoning, you can store the rest in an air tight container along with your other spices and use for another time
  • Place Chicken on the grill and cook 8-10 minutes each side or until internal temp is 165F
  • Remove Chicken and place on a platter or cutting board and let it rest for 10 minutes
  • Add Romaine to a large salad bowl
  • Slice Chicken and add to salad
  • Toss with the Caesar Dressing
  • Add in the shaved Parmesan and Croutons
  • Enjoy!

Notes

Depending on the size of your Chicken Breasts can vary the cook time. Always check the internal temp with a meat thermometer to ensure it's cooked to 165F.
