- 250 grams Calamarata I used Gluten Free
- 2 Tbs EVOO
- 6 slices Bacon chopped
- 20 Cherry or Grape Tomatoes halved
- 1 small Shallot finely chopped about 2 Tbs
- Pinch of Pepper
- Fresh Basil for garnish
Cook pasta as directed on package or until al dente
While the pasta is cooking start the rest
In a large frying pan add EVOO, heat over med/high heat
Add Shallots and Bacon
Sauté until Bacon is about half way cooked (2-4 minutes)
Add Tomatoes, sauté 2-3 minutes until Tomatoes start to break down into a sauce form
Add a bit of pasta water if it gets too dry
Drain pasta and reserve ½ cup of the water
Add pasta to sauce, add in a little bit of the pasta water at a time until desired sauce consistency
Sauté 2-3 minutes
Add fresh Basil for garnish and serve
