- 2 large Carrots roughly chopped
- 1 large thumb of peeled Ginger roughly chopped about 2 Tbs
- ⅓ cup EVOO
- ⅓ cup Rice Vinegar
- 1 ½ teaspoon Sesame Oil
- 1 teaspoon Tamari
- 1 Tbs Honey
- 2 Tbs fresh Lime Juice 1 lime
- ½ teaspoon Sea Salt
- ½ teaspoon Black Pepper
Add all ingredients to a Vitamix or high speed blender
Blend until smooth
Serve over your favorite salad
Enjoy!
Makes approximately 1 ⅓ cup
Store in an air tight container in the fridge for up to 5 days.
