This Carrot Ginger Dressing is made with simple fresh ingredients and is incredibly delicious!

Ingredients
  

  • 2 large Carrots roughly chopped
  • 1 large thumb of peeled Ginger roughly chopped about 2 Tbs
  • cup EVOO
  • cup Rice Vinegar
  • 1 ½ teaspoon Sesame Oil
  • 1 teaspoon Tamari
  • 1 Tbs Honey
  • 2 Tbs fresh Lime Juice 1 lime
  • ½ teaspoon Sea Salt
  • ½ teaspoon Black Pepper

Instructions
 

  • Add all ingredients to a Vitamix or high speed blender
  • Blend until smooth
  • Serve over your favorite salad
  • Enjoy!
  • Makes approximately 1 ⅓ cup
  • Store in an air tight container in the fridge for up to 5 days.
