This Carrot Ginger Dressing is made with simple fresh ingredients and is incredibly delicious!
I love making my own salad dressings. It’s just so much healthier to make your own dressing at home because you know exactly what’s going in it.
Another reason I like making my own dressing is because I can make just enough for what I need and none of it will go to waste.
I mean, I don’t eat salads everyday. I can’t tell you how many times I’ve had to throw out bottles of salad dressing that were over half way full because they expired before I could use it. I don’t know about you, but I hate throwing away food, it feels like such a waste of money.
This Carrot Ginger Dressing is made with:
Carrots, Ginger, EVOO, Rice Vinegar, Sesame Oil, Tamari, Honey, Lime Juice, Salt and Pepper.
Just add everything to a Vitamix or high speed blender and blend until smooth.

Carrot Ginger Dressing
- Prep Time: 5 mins
- Total Time: 5 mins
- Yield: 6 1x
- Category: Salad Dressing
- Cuisine: Gluten Free, Vegetarian
- 2 large Carrots roughly chopped
- 1 large thumb of peeled Ginger roughly chopped (about 2 Tbs)
- 1/3 cup EVOO
- 1/3 cup Rice Vinegar
- 1 1/2 tsp Sesame Oil
- 1 tsp Tamari
- 1 Tbs Honey
- 2 Tbs fresh Lime Juice (1 lime)
- 1/2 tsp Sea Salt
- 1/2 tsp Black Pepper
- Add all ingredients to a Vitamix or high speed blender
- Blend until smooth
- Serve over your favorite salad
- Makes approximately 1 1/3 cup
- Store in an air tight container in the fridge for up to 5 days.
