- 3 Ripe Bananas mashed
- ¼ cup Maple Syrup
- 1 teaspoon Vanilla
- 3 Eggs
- 2 ¼ cup Almond Flour
- 1 teaspoon Baking Soda
- ½ teaspoon Sea Salt
- 5 oz Dried Cranberries about ¾ of a cup
Preheat oven to 350 degrees
In a large bowl whisk together Bananas, Maple Syrup, Vanilla, and Eggs
In a smaller bowl mix together Almond Flour, Baking Soda, and Salt
Add the dry ingredients to the wet ingredients and mix until combined
Fold in the Cranberries saving some to sprinkle on top
Spray loaf pan with non-stick baking spray
Pour batter into pan
Sprinkle more Cranberries on top
Bake 45-50 minutes or until toothpick comes out clean after sticking it in the center
Let it rest for 1 hour before slicing
