Cranberry Banana Bread (Gluten Free)

This Cranberry Banana Bread (Gluten Free) is so moist, and oh so flavorful! This will seriously be your new favorite banana bread!

If you’ve been following the blog lately then you may remember my post on Gluten Free Pumpkin Bread. It turned out soooo delicious that I thought about trying the same recipe base for this Cranberry Banana Bread!

Well it’s not quite the same, obviously I substituted mashed ripe bananas instead of the pumpkin puree, and left out the pumpkin pie spices. Then of course added in some dried cranberries.

But you get the idea! 🙂

Here’s what you need:

  • 3 Ripe Bananas mashed (the more ripe, the more sweet banana flavor you will get)
  • 1/4 cup Maple Syrup
  • 1 tsp Vanilla
  • 3 Eggs
  • 2 1/4 cup Almond Flour
  • 1 tsp Baking Soda
  • 1/2 tsp Sea Salt
  • 5 oz Dried Cranberries (about 3/4 of a cup)

Now go ahead and Preheat your oven to 350 degrees. Make sure it’s preheated before you start making this because it whips up fast!

In a large bowl whisk together Bananas, Maple Syrup, Vanilla, and Eggs. In a smaller bowl mix together Almond Flour, Baking Soda, and Salt.

Add the dry ingredients to the wet ingredients and mix until combined. Fold in the Cranberries saving some to sprinkle on top.

Spray loaf pan with non-stick baking spray, I like to use the Coconut Oil spray for baking sweet treats because I think it’s a better flavor than some of the other cooking sprays. 

Pour the batter into pan, then sprinkle more Cranberries on top. Bake 45-50 minutes or until toothpick comes out clean after sticking it in the center.

Let it rest for 1 hour before slicing. Yes 1 full hour! I know it’s tempting to want to dig in right away, but it needs time to set. Trust me on this!

Now you can go ahead and chow down on all of this Cranberry Banana Bread deliciousness!
