Ingredients
  

  • 2 4 oz Salmon Fillets
  • 1 cup Cherry or Grape Tomatoes
  • 1/2 cup Pitted Kalamata Olives
  • 1/2 Red Onion chopped
  • 1 Lemon sliced
  • 3 oz Feta Cheese
  • 3 Tbs EVOO
  • 1 Tbs Dried Oregano
  • 1/4 tsp Sea Salt
  • 1/4 tsp Black Pepper

Instructions
 

  • Preheat oven to 400F
  • Place Salmon, Tomatoes, Olives, Onion, Lemon slices and Feta on sheet pan
  • Drizzle EVOO over everything
  • Sprinkle with Oregano, Salt and Pepper
  • Bake 15-20 minutes or until Salmon is cooked through
  • Enjoy!
