- 8 oz Salmon fillets
- 2 Zucchinis chopped into bite size pieces
- 1 Lemon sliced
- 2-3 Tbs EVOO
- 2-3 tsp dried Thyme
- Sea Salt and Pepper to taste
Preheat oven to 400 degrees Fahrenheit
Place Salmon and Zucchini on sheet pan, spread everything in a single layer
Drizzle EVOO over everything
Place Lemon slices over Salmon and Zucchini
Sprinkle with Thyme, Sea Salt and Pepper
Bake 15-20 minutes until Salmon is cooked through
