This Mediterranean Lentil and Kale Salad is loaded with so much goodness! It tastes even better the next day which is great for meal prepping!

Ingredients
  

  • 1 Bunch Red Kale chopped and thick stems removed
  • 1 Cup Cooked Lentils
  • ½ Cup Sliced Red Onions
  • 15-20 Pitted Kalamata Olives
  • ½ Cup Chopped Feta

For the Dressing:

  • ¼ Cup EVOO
  • Juice from 1 Lemon
  • 1 teaspoon Dried Oregano
  • ¼ teaspoon Sea Salt
  • ¼ teaspoon Black Pepper

Instructions
 

  • Add Kale to a large bowl
  • Mix together all of the ingredients for the dressing and pour over Kale
  • Massage Kale for about 1 minute to coat the dressing evenly and soften the leaves
  • Add in Lentils, Kalamata, Red Onion, and Feta
  • Mix together and serve
  • Enjoy!
