This Mediterranean Lentil and Kale Salad is loaded with so much goodness! It tastes even better the next day which is great for meal prepping!

- 1 Bunch Red Kale chopped and thick stems removed
- 1 Cup Cooked Lentils
- ½ Cup Sliced Red Onions
- 15-20 Pitted Kalamata Olives
- ½ Cup Chopped Feta
For the Dressing:
- ¼ Cup EVOO
- Juice from 1 Lemon
- 1 teaspoon Dried Oregano
- ¼ teaspoon Sea Salt
- ¼ teaspoon Black Pepper
Add Kale to a large bowl
Mix together all of the ingredients for the dressing and pour over Kale
Massage Kale for about 1 minute to coat the dressing evenly and soften the leaves
Add in Lentils, Kalamata, Red Onion, and Feta
Mix together and serve
