Mexican Shrimp Cocktail (Coctel de Camarones)

This Mexican Shrimp Cocktail also known as Coctel de Camarones is such a fun appetizer to make! Put them in little individual cup so guests can serve themselves. It's sure to be a hit at any party!

Ingredients
  

  • 1 lb Raw Shrimp if you are using cooked shrimp see notes below
  • 1 Tbs Sea Salt
  • 3 Large Tomatoes chopped
  • 1 cup Red Onion chopped
  • 1 cup Cucumber chopped
  • 2 Celery stalks chopped
  • 1 Jalapeño finely chopped
  • 1/4 cup Cilantro finely chopped
  • 1/2 cup Ketchup
  • Juice from 1 Lime
  • 1 Tbs Tabasco or more per your spice level
  • 1 Avocado chopped

Instructions
 

  • Peel and devein the Shrimp
  • Bring a medium pot with water to a boil
  • Add 1 Tbs Sea Salt and the Shrimp
  • Cook 2-3 minutes or until Shrimp are cooked through, reserve 1 cup of the water and let it come to room temperature
  • Remove the Shrimp and let cool, then chop into pieces
  • In a medium bowl add Tomatoes, Red Onion, Cucumber, Celery, Jalapeño, Cilantro, Ketchup, Lime Juice, Tabasco and Shrimp
  • Mix and add some of the Shrimp water a little bit at a time to desired consistency, I used around 1/4 cup
  • Taste and add more Tabasco if you like it spicier
  • Mix in the Avocado and refrigerate an hour before serving
  • Serve with Tortilla Chips
  • Enjoy!

Notes

If you are using cooked shrimp then omit the first 4 steps. You can use clam juice instead of shrimp water to mix in the cocktail
