Mexican Shrimp Cocktail (Coctel de Camarones)

This Mexican Shrimp Cocktail also known as Coctel de Camarones is such a fun appetizer to make! Put them in little individual cup so guests can serve themselves. It's sure to be a hit at any party!

Raw Shrimp
if you are using cooked shrimp see notes below

Sea Salt

Large Tomatoes chopped

Red Onion chopped
1
cup
Cucumber chopped
2
Celery stalks chopped
1
Jalapeño finely chopped
1/4
cup
Cilantro finely chopped
1/2
cup
Ketchup
Juice from 1 Lime
1
Tbs
Tabasco or more per your spice level

Avocado chopped
Instructions
Peel and devein the Shrimp
Bring a medium pot with water to a boil
Add 1 Tbs Sea Salt and the Shrimp
Cook 2-3 minutes or until Shrimp are cooked through, reserve 1 cup of the water and let it come to room temperature
Remove the Shrimp and let cool, then chop into pieces
In a medium bowl add Tomatoes, Red Onion, Cucumber, Celery, Jalapeño, Cilantro, Ketchup, Lime Juice, Tabasco and Shrimp
Mix and add some of the Shrimp water a little bit at a time to desired consistency, I used around 1/4 cup
Taste and add more Tabasco if you like it spicier
Mix in the Avocado and refrigerate an hour before serving
Serve with Tortilla Chips

Notes
If you are using cooked shrimp then omit the first 4 steps. You can use clam juice instead of shrimp water to mix in the cocktail
