This Mexican Shrimp Cocktail also known as Coctel de Camarones is such a fun appetizer to make! Put them in little individual cups so guests can serve themselves. It’s sure to be a hit at any party!

If you have never had Mexican Shrimp Cocktail then you are in for a real treat! It’s nothing like the American Shrimp Cocktail, honestly I think it’s better!
I mean what’s not to love, it’s made with crunchy vegetables, shrimp and mixed in a spicy yet tangy tomato sauce. You can serve it with chips, crackers or whatever else you desire!
Not only is this great for Christmas or New Year’s Eve parties, it’s also a hit for Super Bowl parties, Cinco de Mayo and summer bbq’s. So it can be enjoyed year-round!

Here’s what you need to make this:
- 1 lb Raw Shrimp (if you are using cooked shrimp see notes in the recipe card)
- 1 Tbs Sea Salt
- 3 Large Tomatoes chopped
- 1 cup Red Onion chopped
- 1 cup Cucumber chopped
- 2 Celery stalks chopped
- 1 Jalapeño finely chopped
- 1/4 cup Cilantro finely chopped
- 1/2 cup Ketchup
- Juice from 1 Lime
- 1 Tbs Tabasco or more per your spice level
- 1 Avocado chopped

Peel and devein the Shrimp. Bring a medium pot with water to a boil. Add 1 Tbs Sea Salt and the Shrimp.
Cook 2-3 minutes or until Shrimp are cooked through, reserve 1 cup of the water and let it come to room temperature.
Remove the Shrimp and let cool, then chop into pieces.

In a medium bowl add Tomatoes, Red Onion, Cucumber, Celery, Jalapeño, Cilantro, Ketchup, Lime Juice, Tabasco and Shrimp.
Mix and add some of the Shrimp water a little bit at a time to desired consistency, I used around 1/4 cup. Taste and add more Tabasco if you like it spicier. Mix in the Avocado and refrigerate about an hour before serving.
When making Mexican Shrimp Cocktail for a party I would recommend placing these cups in a shallow dish with ice to keep them chilled so people can serve themselves. If that’s not an option, keep them in the fridge until ready to serve.

Notes
If you are using cooked shrimp then omit the first 4 steps. You can use clam juice instead of shrimp water to mix in the cocktail
