These Mini Ham and Cheese Frittatas are easy to make, flavorful and easy to reheat the next day which is perfect for meal prepping!

- 8 Eggs
- 1 Tbs Chives
- 1 Tbs Tarragon
- Pepper to taste
- 1 1/2 cups chopped Ham
- 1 cup shredded Cheddar Cheese
- 2 Tbs Unsweetened Coconut Milk
- Non-stick cooking spray
Preheat oven to 375 degrees
Spray 12 cup muffin tin with non-stick cooking spray
Layer ham on the bottom of each cup
Top with cheese
In medium bowl whisk together eggs, chives, tarragon, pepper, and milk
Pour egg mixture evenly over ham and cheese filling the muffin tins around 3/4 full.
Bake 20-25 minutes
