These Mini Ham and Cheese Frittatas are easy to make, flavorful and easy to reheat the next day which is perfect for meal prepping!

Ingredients
  

  • 8 Eggs
  • 1 Tbs Chives
  • 1 Tbs Tarragon
  • Pepper to taste
  • 1 1/2 cups chopped Ham
  • 1 cup shredded Cheddar Cheese
  • 2 Tbs Unsweetened Coconut Milk
  • Non-stick cooking spray

Instructions
 

  • Preheat oven to 375 degrees
  • Spray 12 cup muffin tin with non-stick cooking spray
  • Layer ham on the bottom of each cup
  • Top with cheese
  • In medium bowl whisk together eggs, chives, tarragon, pepper, and milk
  • Pour egg mixture evenly over ham and cheese filling the muffin tins around 3/4 full.
  • Bake 20-25 minutes
  • Enjoy!
