Paleo Blueberry Muffins (Sugar Free)

Ok guys I made these Paleo Blueberry Muffins today and guess what…they are Sugar Free!!! As in NO sugar added, not even fake sugar.

Ingredients
  

  • 2 ½ cups Almond Flour
  • ¾ teaspoon Baking Soda
  • ½ teaspoon Sea Salt
  • 3 Eggs
  • cup Unsweetened Apple Sauce
  • 2 Tbs Honey
  • 2 Tbs Coconut Oil melted
  • 1 teaspoon White Vinegar
  • 1 teaspoon Vanilla Extract
  • 1 cup Fresh Blueberries
  • non-stick cooking spray

Instructions
 

  • Preheat oven to 350 degrees.
  • Spray 12 cup muffin pan with non-stick cooking spray.
  • In large bowl add Almond Flour, baking soda, and salt.
  • Mix well.
  • In medium bowl add eggs, applesauce, honey, coconut oil, vinegar, and vanilla.
  • Mix well.
  • Add the wet ingredients to the dry ingredients and mix well.
  • Fold in Blueberries.
  • Add mix to muffin tin.
  • Bake 18 minutes.
  • Let cool in pan for 10 minutes before serving.
  • Makes 12 muffins.
  • Enjoy!
