Sausage and Red Pepper Frittata

This Sausage and Red Pepper Frittata is super easy to make and loaded with so much flavor! This is like the ultimate brunch food!

- 6 eggs
- ¼ cup Unsweetened Coconut Milk
- 1 lb ground breakfast sausage
- 1 chopped Red Pepper
- ½ teaspoon Sea Salt
- ½ teaspoon Pepper
- 1 teaspoon Thyme
- 2 teaspoon Tarragon
- 1 Tbs Olive Oil
- 1 cup Mozzarella Cheese
In 9 inch cast iron skillet, brown the sausage over medium heat.
Once cooked through remove from pan and drain grease.
Add olive oil and red pepper, cook until softened about 5 minutes, remove from pan.
Set oven temp to broil on high.
In a bowl, whisk together eggs, coconut milk, seasonings, and half of the cheese.
Add sausage back to the skillet with the red pepper and pour egg mixture over top.
Cook over medium heat 6-10 min, or just until set on the bottom but top is still wet.
Add the rest of the cheese to the top.
Place skillet in oven and broil for 1-2 minutes until fluffy and cooked through.
Remove from oven and let it set for 5-10 minutes before cutting into.
