This Slow Cooker Chicken Noodle Soup delivers all of the classic comforts you love. It is loaded with juicy, tender chicken, vegetables, and perfectly cooked noodles. This is like pure comfort in a bowl!
1 ½lbsboneless skinless Chicken Breastsyou can substitute rotisserie chicken as well
5Clovesminced Garlic
1Thumb of grated Ginger
6Celery Stalks chopped
6Medium Carrots chopped
1Sweet Onion chopped
8cupslow sodium Chicken Broth
1Tbsdried Thyme
1Tbsdried Parsley Flakes
2teaspoondried Sage
¼teaspoonground Sea Salt
½teaspoonground Black Pepper
2Bay Leaves remove before serving
2cupsgluten free noodlesabout 6 oz, I used brown rice pasta spirals
Instructions
Add Chicken to the Crock Pot.
Add in Garlic, Ginger, Celery, Carrots, and Onion.
Pour in Chicken Broth.
Add Thyme, Parsley, Sage, Salt, Pepper, and Bay Leaves.
Cover and set the Crock Pot on high for 4 hrs or low for 8.
During the last 10 minutes of cooking, remove chicken and chop or shred into bite-sized pieces, and add back to the crock pot. If you are using rotisserie chicken, this is when you'd want to add it in.
Add in noodles, cover and cook 10 minutes or until noodles are done.
Remove Bay Leaves before serving.
Serve and enjoy!
