I love a good homemade breakfast. Especially when I can cook everything all in one skillet. It just makes it so much easier for cooking as well as cleanup.
All you need to make this yummy breakfast skillet is Smithfield Applewood Smoked Bacon Marinated Fresh Pork Loin Filet, Red Bell Pepper, Yellow Bell Pepper, Sweet Onion, Spinach, and Eggs.
That’s it!
I discovered the Smithfield Marinated Fresh Pork Loin Filets a while back and buy them whenever I can to save time.
They are always super flavorful, and I never need to add any extra seasonings to my meals with them.
And in case you are wondering where to grab Smithfield® fresh pork, you can find them at your local Walmart in the pork section.
This was my first time trying the Smithfield Applewood Smoked Bacon Marinated Fresh Pork Loin Filet, and wow, just wow!
I was super surprised to find lots of big pieces of bacon surrounding the pork.
I decided to chop the Pork Loin into bite size pieces and fry them up with the Bacon pieces. I tasted some after they were cooked and Yum Yum Yum!
I seriously could have kept eating all of this deliciousness. But I had a mission… to cook breakfast for my family. 🙂
So after the Pork was cooked I set it aside and added the Peppers and Onions to the skillet.
Then sautéed them 5-6 minutes.
I added in a few handfuls of fresh Spinach, no need to measure this, add as much or as little as you like. It cooks down fast!
I spread the Peppers aside to create a hole for the Eggs to cook in.
I whisked 4 Eggs in a small bowl and added them to the skillet.
Moved them around with a spatula until they were nice and scrambled.
Added the Pork back to the skillet to mix in and then serve.

Ingredients
- 1 lb Smithfield Applewood Smoked Bacon Marinated Fresh Pork Loin Filet cut into bite size pieces
- 1 Red Bell Pepper sliced into thin strips
- 1 Yellow Bell Pepper sliced into thin strips
- 1/2 large Sweet Onion sliced into thin strips
- 2–3 handfuls of fresh Spinach
- 4 Eggs
- 2 Tbs Cooking Oil divided
Instructions
- Heat 12 inch cast iron skillet over med/high heat
- Add 1 Tbs Cooking Oil
- When oil starts to shimmer add Pork
- Sauté 8-10 minutes or until Pork is cooked all the way through
- Remove Pork and set aside
- Add 1 Tbs oil to skillet
- Add Peppers and Onions, sauté 5-6 minutes until slightly softened
- Add Spinach and sauté 1-2 minutes
- In a small bowl whisk together Eggs
- Create a hole in the middle of the skillet by moving the Peppers and Onions aside
- Pour Eggs into the hole, cook them 1-2 minutes until scrambled
- Add Pork back into skillet, mix well and remove from heat
- Serve and enjoy!
