So I decided to make something other than Squash or Pumpkin today, wait, what?!
I’m taking a break from all of the Thanksgiving recipes and indulging into the dessert world for a bit. Everything in moderation right?! 🙂
I am totally loving these Coconut Flour Brownies. These are made with simple ingredients and are totally Gluten Free.
The only flour I used for this is Coconut Flour.
I like using Coconut Flour for baking, it’s healthier than regular flour, plus it’s Gluten Free.
Coconut Flour is high in fiber, protein, and healthy fats. It’s also low in sugar, digestible carbohydrates, and calories. I mean hey, anything I can do to make these sweet treats a little bit healthier right?! 🙂
I also used Truvia White Sugar (which is a natural sweetener made from the Stevia leaf). The beauty about using Truvia sugar is that you only need to use about half the amount of regular sugar. I love it and use it in baking to replace sugar all the time.
The other staple ingredients used for these brownies are Eggs, Vanilla Extract, Dark Cocoa Powder (you can use regular Cocoa Powder if you want, I just wanted to give these brownies a darker color), Chocolate Chips, and Coconut Oil.
I use Coconut Oil because it gives these brownies a more Coconutty flavor along with the Coconut Flour. Plus Coconut Oil is way better for your health than say Vegetable Oil or Canola Oil.
Alright, all this talk about these brownies is making me hungry!

Ingredients
- 6 Eggs
- 1/2 cup Truvia White Sugar, you can substitute with 1 cup regular sugar
- 1/2 tsp Vanilla Extract
- 1/2 cup Dark Cocoa Powder
- 1/2 cup Coconut Flour
- 1/3 cup Coconut Oil melted
- 1 cup Chocolate Chips
Instructions
- Preheat oven to 350 degrees.
- Grease 8×8 baking pan with a little bit of Coconut Oil.
- In medium bowl add Eggs, Sugar, and Vanilla, mix well.
- In small bowl mix Cocoa Powder and Coconut Flour until blended.
- Add the dry ingredients to the wet ingredients, stir.
- Add in Coconut Oil and stir until all lumps are gone.
- Add Chocolate Chips.
- Spread mix onto greased pan.
- Bake 30-35 minutes.
- Enjoy!

I made this today exactly according to directions and it turned out dry and mealy, not anywhere near the picture. The dark cocoa itself was a good touch but it was unbearably dry and the entire pan had to be thrown out. Would not make it again.

This should be taken off this website! Fraud recipe compared to the picture and I would bet money the picture in this is NOT from this brownie recipe. Very frustrating and dissapointing. As another commenter said, these came out SO DRY! And trust me … I did not do anything wrong. I’m incredibly experienced in the kitchen however I now have to eat sugar free and as little carbs as possible so am having to adjust how I cook and bake. I had a feeling these would be dry by this recipe but decided I better just follow the recipe exactly. I even took them out early becuse I could see how dry they were becoming. Wow. It has the texture of dry bread and very little sweetness even with half a cup of stevia. Truly just awful. Definitely DO NOT waste your time with this recipe … look elsewhere like I’ll be doing.

Let me start off by saying this recipe is not good. Plain and simple. The end result was not sweet at all, and that’s coming from someone on keto who doesn’t eat white sugar. Having said that, I could tell that there wasn’t enough liquid here based on how much coconut flour is being used. Coconut flour is like a sponge and it will suck up all the moisture it can! Therefore, I added a half cup of water to my brownies. My brownies didn’t turn out dry, purely because I added the water. However, they weren’t very good and basically just tasted like unsweetened cocoa powder. Plus, the texture was gritty, which is not something you want from a brownie. Unfortunately, all of the ingredients in this recipe aren’t cheap and that’s a lot of money down the drain!

Sorry to hear it didn’t work out for your Natasha. I’ve made this several times and they never turn out dry. It’s hard to say what you did wrong without being in the kitchen to see how you made this. As far as sweetness goes, everyone has a different opinion of what they consider too sweet or not too sweet etc. Thanks for giving it a try, have a great day!

Sometimes, adding extra eggs to the mixture works well. BUT, that being said, I’ve yet to bake a brownie recipe that DOESN’T come out dry and awful.
I did come to realize that with Stevia, you should use 1/4 cup generally when it calls for 1/2 cup of any other sweetener, because Stevia is super sweet.
