I love a good BLT in the summer. But I don’t like all of the carbs from the bread. So I decided to make this version of a BLT into a Lettuce Wrap and added a new twist with some homemade Smoky Chipotle Sauce, which is highly addicting.
BLTs always remind me of summers when I lived back in Minnesota.
I used to have a patio garden where I grew tons of Tomatoes in these huge pots. I would plant them all in the beginning of June (because it was too cold to plant before then). By August I had fresh Tomatoes growing like crazy! The Tomatoes were always are nice and plump this time of year.
When the Tomatoes were ripe and ready I would start making BLTs! I think one summer I had BLTs almost every night for dinner. Yep. Probably not the healthiest for me to eat Bacon every night, but YOLO!
I am a total Bacon lover.
For BLTs I always purchase a good thick cut Bacon. Don’t opt for the cheap Bacon here, trust me, you’ll just have a fatty shriveled up greasy piece of Bacon. A good thick cut Bacon shouldn’t shrivel up when cooked. It’ll be more meaty and less greasy.
I used big Romaine Lettuce Leaves for this recipe, they held up really well when chowing down on these.
Then I added some thick slices of Tomatoes, you can use any type of your favorite fresh Tomato.
Top it with the cooked Bacon and some chopped up Avocados. Avocados on BLTs are amazing!
Now let’s talk about the Smoky Chipotle Sauce.
You only need 4 ingredients for this sauce:
- Mayo
- Chipotle Chili Powder
- Paprika
- Lime Juice
Mix the sauce together and drizzle over the BLTs. Total Yumness! You get a little kick of spiciness from the Chipotle Chili Powder (if you like it really spicy you can add more), and a hint of Smoky flavor from the Paprika. The Lime Juice gives it a bit of a cooling citrus flavor.
This sauce is seriously addicting. With each bite I was like, “oooh this is spicy (insert Minnesoooota accent here), but I want more!”

Ingredients
- 8 slices thick cut Bacon
- 4 large Romaine Lettuce Leaves
- 1 Avocado sliced
- 2 Roma Tomatoes sliced
- 1 Tbs Mayo
- 1/4 tsp Chipotle Chili Powder
- 1/4 tsp Paprika
- 1/2 tsp Lime Juice
Instructions
- Add Bacon to large frying pan and cook over medium heat until desired crispiness, about 10-15 minutes.
- While Bacon is cooking make Chipotle Mayo sauce.
- In a small bowl add Mayo, Chipotle Chili Powder, Paprika, and Lime Juice.
- Stir well and set aside.
- Place cooked Bacon on paper towels to drain.
- In each Lettuce Leaf evenly add Bacon, Avocado, and Tomato.
- Drizzle Chipotle Mayo sauce over lettuce wraps.
- Enjoy!
