This Creamy Lemon Asparagus Spaghetti comes together in less than 30 minutes including prep time! The flavors of everything come together perfectly, creating a taste explosion with every bite!
Pasta is always my go-to meal when I want something quick to make. I love it, it’s just so versatile. You can jazz it up so many different ways.
Since it’s now officially Spring, I wanted to incorporate some Springtime veggies like Asparagus along with some Lemon flavoring.
The homemade Creamy Lemon Sauce I made for this really ties this dish together and tastes so luxurious!
Here’s what you need to make this:
- 6oz Spaghetti (I used Delallo gluten free spaghetti)
- 1 bunch Asparagus chopped into 1 inch pieces, (discard the woody thick bottom part)
- 4 Tbs EVOO divided
- 1 Small Sweet Onion chopped
- 3 Cloves Minced Garlic
- 1/2 Cup Heavy Cream
- 1 cup White Cooking Wine
- 1 Lemon Zested and Juiced
- 1/2 Cup Freshly Grated Parmesan + more for topping
- 1/4 Cup Fresh Parsley Chopped
- Sea Salt and Pepper to taste
Cook Spaghetti as directed on package until al dente. While pasta is cooking add 2 Tbs EVOO to a large skillet and heat over med/high heat.
When oil is shimmering add Asparagus and sprinkle a little Sea Salt and Pepper over it. Cook until crispy, 5-6 minutes then remove from skillet and set aside.
Add 2 Tbs EVOO and Onions to skillet, sauté 3-4 minutes. Then add Garlic and sauté 1 minute. Add Heavy Cream, Wine, Lemon Zest and Juice.
Bring to a boil then turn the heat down and let it simmer for 5 minutes. Add Spaghetti, Asparagus, Parsley, Parmesan and stir until creamy.
Season with Sea Salt and Pepper to your taste. Top with more Parmesan for serving.
