It’s Friday, who’s ready for a cocktail?! These Pineapple Mojitos are super easy to make and taste so refreshing!

I’m so excited because when the school day is done today, I will be officially on Spring Break! The only thing on my agenda this next week is sleeping in every day, squeezing in a few beach days with my son, making some new recipes for the blog, and enjoying a few cocktails at night while I’m relaxing on the lanai.

Ah sounds dreamy doesn’t it? 🙂

Alright, let’s get into making these Pineapple Mojitos!

I absolutely love a good Mojito. A while back I made The Perfect Mojito, which is the basic plain version of a Mojito.

Today I’m mixing it up, making a different version of a Mojito, one that’s infused with Pineapple!

I love Pineapple, so I decided to make a Pineapple Mojito. This drink has the perfect balance of sweetness with the Pineapple, the fragrent flavor of the Mint and Lime, and of course the Rum. It’s perfect. I may have to rename this drink The Perfect Mojito!

To make a Mojito you will need a Cocktail Muddler.

I also used some Mason Jar Mugs. Mason Jars are a bit bigger than regular glasses, so if you’re using a smaller glass, adjust the recipe accordingly.

First add the Limes, Mint, and Simple Syrup to the mugs.

Next muddle. I love muddling, the aroma that comes out of each mug is amazing! The muddler will infuse the Lime, Mint, and Simple Syrup together to really give this drink an over all nice flavor.

Fill the mugs 3/4 full with ice.

In this order: add in the Rum, Pineapple Juice, and a splash of Club Soda.

Mix with a stirring spoon and garnish with more Mint or Pineapple.

Then just sit back, relax, and enjoy this beautiful cocktail!

Ingredients

Units Scale
  • 1 Lime cut into 8 wedges
  • 4 tsp Simple Syrup
  • 10–12 large fresh Mint Leaves
  • 3oz White Rum
  • 6oz Pineapple Juice
  • Splash of Club Soda
  • Ice
  • This recipe is for 2 cocktails using Mason Jar Mugs which are a bit bigger than regular drinking glasses. You may need to adjust the recipe accordingly if you’re using smaller glasses.

Instructions

  1. Add Limes, Mint, and Simple Syrup dividing evenly into 2 Mason Jar Mugs.
  2. Muddle this mixture together for about 20 seconds.
  3. Fill the Mason Jars about 3/4 full with ice.
  4. Add 1 1/2 oz Rum to each mug.
  5. Add 3oz Pineapple Juice to each mug, and top with a splash of Club Soda.
  6. Add chunks of Pineapple for garnish.
  7. Enjoy!
