I love this little Honey Bear, there’s just something about honey in a bear jar that brings me back to childhood memories and puts a big smile on my face.
Growing up in the country near a small town in Minnesota, my dad had bee hives set up in a corner of our yard. So we always had fresh honey in little bear jars in our cupboard. We used honey on everything. It works great as a natural sweetener and has tons of nutritional benefits.
Ok Honey Bear, no more distractions! Lets get back to these Almond Cranberry Energy Bites!
This was so easy to make, it took maybe 10 minutes tops. And the best part is no baking! Woohoo! Don’t get me wrong I love baking, but it’s summer in Florida, so yeah it’s hottttttt! I love the heat, but really do not like baking when it’s 100 degrees outside. 😛
I simply rolled these into bite size balls, put them on a cookie sheet lined with parchment paper, and popped them in the fridge to set. Once they are set you can put them in a tupperware container, but make sure you keep them in the fridge.
These Almond Cranberry Energy Bites are great for an on the go snack, or even for a light breakfast. They are packed with goodness and will give you an energy boost.

Ingredients
- 3/4 cup Gluten Free Oats
- 5 Tbs ground Flaxseed
- 1/4 cup shredded Unsweetened Coconut
- 1 Tbs Raw Cacao
- 1 Tbs Black Chia Seeds
- 1/4 tsp ground Cinnamon
- 4 Tbs Honey
- 1/2 cup Almond Butter
- 1 tsp Vanilla extract
- 1/4 cup dried Cranberries
- 1/4 cup sliced Almonds
Instructions
- Place all ingredients in a large bowl and mix together well
- Form into 1 inch balls
- Refrigerate 20-30 minutes
- Enjoy!
- These will keep up to 1 week in the fridge.
- Makes around 16 bite size pieces.
