Ok my foodie peeps, this Caprese Salad is one of the easiest salads I’ve ever made! It only has 5 ingredients, and can be whipped up in no time. And the best part? It looks super fancy, like you’ve been slaving away in the kitchen!

This could be the perfect ‘Date Night’ dish!

Ahhh spring is in the air…technically this is the first week of spring!

Spring is definitely different for me after moving from Minnesota to Florida almost 2 years ago.

It’s so weird how the seasons you grew up with can effect you and stay with you your whole life.

When I compare the seasons from North Eastern Florida to Minnesota it feels like this:

– Spring in Florida feels like Minnesota summer, warm sunny and 70-80 degrees!

-Summer in Florida feels like you are an egg sitting on the equator at high noon frying… ( I happen to love the heat, so bring it on! )

-Fall in Florida feels like a Minnesota Indian Summer (if you’re from MN then you know what I mean), it’s warm, sunny, 80 degrees, and just perfect.

-Winter in Northern Florida feels like a Minnesota Fall, it can be a bit chilly, with a few warm days in between. (The weather fluctuates between 50-70 degrees during the day, but at night watch out…it’s freezing! Definitely not flip-flop weather and always leaves me thinking “when is summer coming?!”).

Sorry I tend to get side tracked, let’s get back to Spring and this Caprese Salad shall we?

I’ve been making this salad for a few years now and have found a few little hacks that I though I’d share with you.

In most grocery stores you can buy fresh Mozzarella that is pre-sliced to use for salads like this! Yassss!

Use Roma Tomatoes, they are more firm and are similar in size to the Mozzarella slices.

Use Fresh Basil Leaves, the flavor in fresh Basil is absolutely amazing! I used to grow this in my garden before I moved into a condo. Man do I miss my gardening days and smelling the fresh herbs everyday!

Make sure you use EVOO (extra virgin olive oil), it makes the flavor of this salad all come together. (The Italians definitely knew what they were doing when they invented this salad!)

Pair it with a fine glass of red or white wine, it really doesn’t matter, because any kind of wine goes with this dish!

Ingredients

Units Scale
  • 2 Roma Tomatoes sliced
  • 1 8 oz Fresh Mozzarella ball sliced
  • 3–4 oz Fresh Basil
  • 3 tsp EVOO
  • fresh ground black pepper
  • Olives for garnish

Instructions

  1. Layer alternating slices of tomatoes and mozzarella, adding a basil leaf between each, on a plate
  2. Drizzle with olive oil
  3. Season with pepper
