This Avocado Corn Salsa is so fresh, vibrant, and flavorful! This will seriously take your salsa game up a notch!
I love making homemade salsa. I’ve made so many different varieties over the years. Typically I use whatever is available and in season for max freshness.
I’ve been trying to grow Tomatoes for the last year and haven’t had much luck. I bought some starter plants a year ago which started to grow a tiny bit and then just stopped.
I had a cherry tomato plant that was doing well… the squirrels and birds thought so too. Yep no tomatoes for me last year.
This year I decided to try starting them from seeds. And so far so good! (Fingers crossed)
So anyway this salsa is is tomatoless. 🙂
Now my advice to you is to use fresh corn on the Cobb if you can because it will taste so much better! Just cut the kernels right off the Cobb for a juicy crispy texture.
Then stir in some Avocado, Red Onion, Cilantro, Jalapeño, Lime Juice, Lime Zest, Sea Salt and Pepper. Taste and add more seasoning if desired.
I actually didn’t realize I was out of tortilla chips when I did this photo shoot, so I used corn tortillas and baked them! If you want to try this check out my recipe here: How to make Corn Tortilla Chips
Honestly I thought making the chips out of the corn tortillas tasted way better than any store bought chips!

Avocado Corn Salsa
This Avocado Corn Salsa is so fresh, vibrant, and flavorful! This will seriously take your salsa game up a notch!

Ingredients
- 4 ears of Corn
- 2 Avocados pitted, skinned and chopped
- 1/4 cup Red Onion finely chopped
- 1 Jalapeño finely chopped
- Zest and Juice from 2 Limes
- 1/4 cup Cilantro chopped
- Sea Salt and Pepper to taste
Instructions
- Remove Corn Kernels from the cob with a knife and place in a large bowl
- Add all of the remaining ingredients and stir.
- Taste and add more Salt or Pepper to your liking
- Enjoy!
