It’s back to school this week and things have been a little hectic in our house. I’ve been trying to come up with quick meal ideas to get us through the busy weeknights.
I recently discovered these Green Giant Riced Veggies, so I thought I’d give them a try.
I absolutely love these! I tried the Butternut Squash Riced Veggies.
All you need to do is microwave these for about 5 minutes and they’re done! It’s so much easier then trying to rice the veggies yourself which means less prep work and less cleanup.
Plus they’re gluten free and low in calories.
I love making burrito bowls, so today I’m swapping out rice and replacing it with the Butternut Squash Riced Veggies instead. The Green Giant Riced Veggies have up to 85% fewer calories than the leading brand of white rice, whoop whoop!
Now the Riced Veggies do not come with sauces or seasonings, so after I cooked these in the microwave I added Chili Powder, Cumin, and Salt to give them a little kick.
After you season these, give it a quick taste, if you like your burrito bowls more spicy then add more Chili Powder and Cumin to it.

Butternut Squash Burrito Bowls
- Prep Time: 5 mins
- Cook Time: 5 mins
- Total Time: 10 mins
- Yield: 2-3 1x

- 1 10oz package Green Giant Riced Veggies Butternut Squash
- 1/4 tsp Chili Powder
- 1/4 tsp Cumin
- Salt to taste
- 10 Cherry Tomatoes halved
- 1 15oz can Black Beans drained and rinsed
- 1 Avocado sliced
- 3–4 Lime wedges
- Cilantro for garnish
- Cook Green Giant Riced Veggies Butternut Squash as directed on package
- Add Butternut Squash to a large bowl and mix in Chili Powder, Cumin, and Salt. Taste and add more seasonings to your liking if needed.
- Divide Butternut Squash evenly among bowls
- Add Black Beans, Tomatoes, Avocado, drizzle with Lime Juice and add Cilantro for garnish
