This Cilantro Lime Quinoa only requires 3 simple ingredients and goes perfectly with any Mexican meal!
Cilantro and Lime are probably my two favorite ingredients. I use them in a variety of dishes including similar ones like this such as Cilantro Lime Cauliflower Rice or Cilantro Lime Rice or even Cilantro Lime Hummus.
There’s just something about those two flavors that just go so good together. I think it’s the taste and wonderful aroma these give off that seem to always remind me of my travels to Mexico (which btw is where I picked up this beautiful colored bowl in the pictures).
I decided to use Quinoa this time because it’s so much healthier than Rice.
Quinoa is like a true Super Food. It’s:
- High in Protein
- High in Fiber
- Gluten Free
- Contains all nine essential amino acids
- High in Iron and Magnesium
- High in Antioxidants
I mean really the list could go on and on…
This works great as a side dish for pretty much any Mexican meal you want to make such as Tacos, Burritos, Fajitas, or you could even make a yummy salad with it!

Ingredients
- 1 cup dry Quinoa
- Juice from 1 Lime (about 2–3 Tbs)
- 1/4 cup chopped fresh Cilantro
Instructions
- Cook Quinoa as directed on package
- Once cooked add Lime Juice and Cilantro, mix well
- Serve with your favorite Mexican dish
- Enjoy!
