Creamy Tuscan Salmon

This Creamy Tuscan Salmon will be your new favorite easy meal! Perfectly pan-seared salmon in a creamy parmesan sauce with garlic, sun-dried tomatoes, spinach and fresh parsley. You can have this restaurant quality meal on the table in about 30 minutes!

Creamy Tuscan Salmon

I’ve had this dish several times at restaurants but have never made it at home until now. What on earth was I waiting for! I guess I thought it looks fancy and was difficult to make.

After I made this and realized how simple it was, I will definitely be making this more often! I may even try using chicken next time, yum!

The sauce is what truly makes this dish though. This is now one of my favorite sauces, I literally wanted to drink this right out of the pan! I don’t advise that though LOL!

Here’s what you need to make this Creamy Tuscan Salmon:

  • 4 Salmon fillets
  • Sea Salt
  • Pepper
  • 2 Tbs EVOO
  • 2 Tbs Butter
  • 6 Cloves Minced Garlic
  • 1/2 cup Chopped Sweet Onion
  • 5 oz Sun-dried Tomatoes in oil, drained of oil
  • 1/3 cup White Cooking Wine
  • 5 oz Baby Spinach
  • 16 oz Heavy Cream
  • 3/4 cup Shredded Parmesan
  • 2 Tbs Fresh Parsley Chopped

Start by sprinkling the Salmon fillets with a little Sea Salt and Pepper. In a large skillet add EVOO and heat over med/high heat. When oil is shimmering add Salmon fillets flesh side down.

Cook for 5 minutes, flip the Salmon over and cook another 5 minutes or until it’s cooked through. Remove Salmon from skillet and set aside.

Add Butter to the skillet. Once Butter is melted add Onion and sauté 1-2 minutes. Add Garlic and sauté 1 minute. Add the Sun-dried Tomatoes and sauté 1-2 minutes so they release their flavors.

Add the White Wine and let reduce down a bit. Turn heat down to med/low until it’s a low simmer. Add Spinach and Heavy Cream.

Cook at a low simmer so Cream doesn’t curdle and Spinach wilts down. Add the Parmesan and stir until melted in. Add the Salmon back to the skillet, sprinkle with Parsley and spoon sauce over Salmon.

Eat as is, serve with a baguette, serve over steamed veggies, rice or pasta!
