Now I’m not trying to make any health claims, I’m just telling you what worked for me in healing my nasty cold. 🙂

I think a lot of people traditionally eat chicken noodle soup when they are sick. I really didn’t feel like having a chicken soup with noodles so I decided to swap out the noodles for rice.

 

I like to use Arborio Rice in soups because it’s a smaller grain and gives it a unique texture. You can substitute it with your own favorite rice, just see the cooking notes in the recipe card if you do.

I used my favorite 6 quart Dutch Oven (affiliate) for this recipe so I could sauté and cook everything in the same pot. I prefer using a Dutch Oven over a regular sauce pan because it retains and distributes heat evenly.

I sautéed Onions, Garlic (I used 5 cloves to really amp this up because garlic is so good for you when you’re sick), Carrots, and Celery.

I like to add in the seasonings during the sauté process so the flavors really mix in. I used a blend of Thyme, Sea Salt, and Pepper.

Then just added some Chicken, Chicken Broth, and Bay Leaves. Let it simmer for about 5 minutes before adding the rice.

Once the rice goes in just simmer more 15 minutes.

Then stir in some Lemon Juice for an extra immunity boost! (Oh and don’t forget to remove the Bay Leaves before eating!) Full recipe below

Ingredients

Scale
  • 1 1/2 lbs Boneless Skinless Chicken Breasts cut into bite size pieces
  • 1 large Sweet Onion chopped
  • 5 Garlic Cloves finely chopped
  • 2 cups chopped Carrots
  • 2 cups chopped Celery
  • 2 Tbs EVOO
  • 1 Tbs dried Thyme
  • 3 Bay Leaves
  • 1 tsp Sea Salt
  • 1 tsp Black Pepper
  • 8 cups Chicken Broth
  • 3/4 cup Arborio Rice
  • 1/4 cup fresh Lemon Juice

Instructions

  1. In a 6 quart Dutch Oven add EVOO and heat over med/high heat
  2. When oil starts to shimmer add Onion and sauté 2-3 minutes
  3. Add Garlic and sauté 1 minute
  4. Add Carrots, Celery, Thyme, Salt, Pepper and sauté 2-3 minutes
  5. Add Chicken, Chicken Broth, and Bay Leaves
  6. Reduce heat and let simmer for 5 minutes
  7. Add Arborio Rice and simmer 15 minutes or until rice is fully cooked
  8. Remove Bay Leaves
  9. Stir in Lemon Juice
  10. Taste and add more salt/pepper to your liking
  11. Enjoy!

Notes

The longer the soup sits after cooking the more broth the rice will absorb. You can add more broth or water to your desired consistency if this happens.

Arborio Rice is a smaller grain of rice. If you use a different kind of rice that’s bigger you may want to use less rice or add more broth.
