How is everyone doing with their New Year’s Resolution?

After the Holiday binge, I’ve been trying to make more healthy recipes at home.

One thing I’ve been doing is replacing pasta with zucchini noodles to cut back on carbs, like in this delicious meal I made today!

Here’s the skinny on what you need to make this:

  • EVOO
  • Garlic
  • Red Pepper Flakes
  • Zucchini
  • Salt/Pepper
  • Lemon Zest and Juice
  • Parsley
  • Capers
  • Bella Portofino Solid Albacore Tuna

I chose to use Bella Portofino Solid Albacore Tuna in extra virgin olive oil because they use the only the best tuna and the highest quality E.V.O.O. This definitely makes a difference in taste, it has a smooth, mellow flavor, and is tender in texture.

I’m very picky about where my tuna comes from and I like that they use only wild-caught and hand-selected tuna.

It’s also an excellent source of protein and natural source of omega 3s, which is perfect for anyone looking to make healthier choices in the New Year.

Alright let’s get into how to make this Spiralized Zucchini with Tuna, Lemon, Parsley, and Capers!

This meal was a total time savor for me. There’s only about 10 minutes of prep work and 5 minutes of cooking time. Which makes it perfect for those busy weeknights!

Start by spiralizing your zucchini. I used the smallest blade setting on my spiralizer to create thin-like ‘noodles’.

Next add some EVOO to a pan and heat over medium heat. When the oil is warm add your garlic and red pepper flakes, sauté about 1 minute until fragrant.

Add in your zucchini, salt, and pepper. Sautée 2-3 minutes. Be careful not to over cook the zucchini as it can become mushy and watery. The shorter the cooking time, the more crispy the zucchini noodles will be, which is perfect.

Then add in the tuna, lemon zest, lemon juice, parsley, and capers. Sautée for 1 minute to heat everything through.

Serve immediately and proceed to chow down on all of this goodness! 🙂

Ingredients

Scale
  • 2 Tbs EVOO (extra virgin olive oil)
  • 1 clove minced Garlic (about 2 tsp)
  • Pinch of Red Pepper Flakes
  • 2 Small to Medium Zucchini spiralized (using smallest blade setting)
  • 1/4 tsp Sea Salt
  • 1/4 tsp Black Pepper
  • 1 4oz can Bella Portofino Solid Albacore Tuna
  • Zest from 1 Lemon (about 1 tsp)
  • 2 tsp fresh Lemon Juice
  • 2 Tbs fresh Parsley
  • 1 – 2 tsp Capers

Instructions

  1. In large frying pan heat EVOO over med heat
  2. When oil is warm add Garlic and Red Pepper Flakes, sauté 1 minute until fragrant
  3. Add Zucchini, Salt, and Pepper
  4. Sauté 2-3 minutes
  5. Add Tuna, Lemon Zest, Lemon Juice, Parsley, and Capers
  6. Sauté 1 minute
  7. Serve immediately
