Lemon Tarragon Salmon Cakes

These Lemon Tarragon Salmon Cakes can be made in under 10 minutes and are so flavorful! This is totally my go-to, quick, and healthy seafood lunch to make when life gets busy.

Lemon Tarragon Salmon Cakes

These days it seems life has been getting busier and busier. Maybe because it’s the beginning of December and I just suddenly realized that I have only a few short weeks before Christmas and have zero Christmas shopping done. Yikes!

Plus the fact that I just got back from vacation a few weeks ago and am super behind on work.

Ahh…Life.

When life gets busy like this, I tend to make quick meals that don’t require a lot of work or thought.

Salmon cakes, are my favorite quick meal to make. I call them ‘cakes’ when I don’t put them on a bun. If you wanted to make this a Salmon burger that would be just as good too.

I’ve made several different types of this version such as Lemon Dill Salmon Burgers, or these Parmesan Dill Salmon Burger with Garlic Aioli. These are just as scrumptious!

Today I decided to try a new spin on this and use Lemon and Tarragon, because Lemon and Tarragon are soooo good on Salmon! The combination really brings out a unique flavor that is mouth watering.

Lemon Tarragon Salmon Cakes

I used a Cast Iron Grill Pan to make these on the stove top, but you could just use a frying pan too. Note: If you’re using a regular frying pan add a little Olive Oil to the pan so they don’t stick. If you’re using a pre-seasoned cast iron grill pan then there is no need to add oil to the pan.

In a medium bowl add in the canned Premium Salmon, Tarragon, Gluten Free Panko, Egg, Sea Salt, Pepper, Shallot, and Lemon Juice.

Mix together well and form into 2 patties or cakes.

Heat your grill pan over the stove top on med/high heat.

Add Salmon Cakes and cook 4 minutes on each side.

Serve over a bed of greens along with my homemade Tartar Sauce.

To make this super easy Tartar Sauce just add Mayo, Tarragon, and Lemon Juice to a small bowl and mix well.

Let me tell ya, this Tartar Sauce is perfect for these Salmon cakes! Yum, Yum, Yum!

Ingredients
  

For the Salmon Cake:

  • 1 7.5 oz can Premium Salmon
  • 1/2 cup GF Panko
  • 1 Egg
  • 1/4 tsp ground Sea Salt
  • 1/4 tsp ground Black Pepper
  • 1 Shallot finely chopped
  • Juice from half a Lemon
  • 1 Tbs Tarragon

For the Tartar Sauce:

  • 2 Tbs Mayo
  • 2 tsp Tarragon
  • 1 tsp Lemon Juice

Instructions
 

  • In a large bowl add together all ingredients for the Salmon Cakes.
  • Form into 2 patties.
  • Heat a 9 inch grill pan over med/high heat.
  • When hot, add the Salmon Cakes.
  • Cook 4 minutes on each side.
  • Serve with Tartar Sauce.
  • For the Tartar Sauce, mix Mayo, Tarragon, and Lemon Juice.
  • Top Salmon Cakes.
  • Enjoy!
