I have really bad snack obsession. I’m addicted to salty and crunchy snacks and usually end up going for unhealthy choices like chips or crackers. But those types of snacks always make me feel bloated and sluggish.

So I’ve been looking for something healthy that will still satisfy my crunchy snack addiction. I started doing some experiments in the kitchen turning healthy foods into satisfying snacks, like these Coconut Oil Kale Chips which are super tasty.

But this time I was looking to create something with a little more substance. So off to the cupboard I went. I found a can of Chickpeas that’s been staring me in the face for months. For a quick second I thought of making some hummus and devouring it with some pita chips… no, no, no, I’ve got to break the cycle.

These Spicy Roasted Chickpeas are made with simple ingredients. This could be the perfect healthy snack!

I decided to open up the can of Chickpeas, rinse/drain it, then put them on some paper towels to dry them off.

Next I went off to my spice cupboard trying to figure out what to season these with. I wanted something spicy, so I grabbed some cumin, chili powder, cayenne pepper, salt, and pepper.

I added the Chickpeas, all the spices and some EVOO to a bowl and mixed it all together. Spread the Chickpeas on a parchment lined baking sheet and roasted them in the oven until they were nice and crispy.

These Spicy Roasted Chickpeas are made with simple ingredients. This could be the perfect healthy snack!

The result? SO GOOD!

These are great as is for snacking, or you could even top them on your favorite salad for a little crunch.

Ingredients
  

  • 1 15 oz can Chickpeas or 1.5 cup cooked Chickpeas
  • 1 Tbs EVOO
  • 1/4 tsp Cumin
  • 1/4 tsp Chili Powder
  • 1/8 tsp Cayenne Pepper
  • 1/4 tsp Sea Salt
  • 1/4 tsp Black Pepper

Instructions
 

  • Preheat oven to 400 degrees
  • Drain and rinse Chickpeas, place them on some paper towels and pat dry
  • Add Chickpeas, EVOO, Cumin, Chili Powder, Cayenne Pepper, Salt, and Pepper to a small bowl and mix well
  • Place Chickpeas on a parchment paper lined sheet pan
  • Bake 30 minutes
  • Enjoy!
