This Easy Balsamic Vinaigrette Dressing takes only 5 minutes to make and is my new go-to salad dressing!
Ok you guys, it’s back to juicing and eating salads for me again this week. I’m still in total detox mode from the cruise I went on over Thanksgiving. Too. Much. Food. 🙂
So when I came back from my cruise last week, I was a hot bloated mess from all of the food I ate. Ugh! I immediately went to the grocery store and filled my shopping cart with as much green things as I could. After all of the over indulgence that I did on the cruise, my body is totally craving all things healthy.
Well after I got home from the grocery store, I started washing and chopping all of the vegetables I bought for a salad I was going to make for lunch. I had everything all ready to go and my stomach was rumbling ‘feed me’! That’s when I opened up the fridge and noticed I had no salad dressing…doh!
Ok, at this point I was getting hangry (hungry + angry) well not really angry, but it’s just a fun saying I like to use when I’m starving and feel like I could eat anything in site.
I was contemplating going back to the store for salad dressing, but I was too tired. I frantically was digging through my cupboards for ideas, then I noticed some Bellucci EVOO that was sent to me to try out before I had left for vacation. I thought to myself ok, now I know most salad dressings have olive oil, but what else can I put in here? Leave it to the good old internet to help me out with the rest of this recipe. 🙂 So this Balsamic Vinaigrette is not my original idea, I just tweaked it to make it to my liking.
Now let’s talk about the EVOO, I gotta say I am totally impressed with Bellucci’s Olive Oil (no I am not getting paid to say this – this is my own opinion). I was actually sent a sample of this olive oil so I could do a taste test and just simply give my opinion.
The Bellucci Organic EVOO has a light peppery taste to it, which makes is perfect for this salad dressing. Another thing I love is the easy pour no-drip spout. If you’ve ever purchased olive oil that doesn’t have the spout attached, then you know it can be a bit messy when you pour it. And then of course I love the fact that it’s 100% Organic, Organic is always better. 🙂
This Balsamic Vinaigrette goes great with my Winter Kale Walnut and Cranberry Salad or my Quinoa Cranberry Pecan Arugula Salad.

Ingredients
- 4 Tbs EVOO
- 2 Tbs Balsamic Vinegar
- 1 tsp minced Shallots or minced Garlic
- Sea Salt and Peppercorn to taste
Instructions
- Whisk all ingredients together.
- Pour over salad.
- Will keep in fridge for up to a week.
