Winter Kale Walnut and Cranberry Salad

How is everyone doing on their New Years Resolution? Sometimes I find it hard getting in the mood to eat salads when it’s cold outside. So I decided to make a Winter Kale Walnut and Cranberry Salad. It’s so delicious, hearty, and healthy!

This Winter Kale Walnut and Cranberry Salad

When I say it’s cold outside all of my Minnesota friends just laugh at me. No one believes me when I say northern Florida gets cold in the winter. Now mind you I am originally from Minnesota and experienced more than my fair share of cold winters there, we’re talking -30 degrees fahrenheit! Oh yeah you betcha, that’s cold! (insert Minnesota accent here)

I’ve been living in Florida for about a year and a half now. So basically I’ve become used to a very hot climate during the summer months. This last summer it was almost 100 degrees fahrenheit everyday, which I loved! But when winter rolls around and the temps drop down to 60 degrees, which it has been this last week, it’s like Brrrrr! No flip flops for me for a while!

Yep, go ahead and laugh at me I don’t mind.

This Winter Kale Walnut and Cranberry Salad

All right, so let’s get back to this delicious winter salad!

This salad is packed with nutrition. I love to use Kale. Now Kale can be a little tougher to chew than regular lettuce. I recommend massaging your Kale before you make your salad. I know this may sound weird, but massaging it for a minute or so will definitely soften it up and make it easier to chew. Also, remove any thick stem from the Kale, you can save that part for juicing or smoothies.

I also made a home made Balsamic Vinaigrette to go with this salad. It literally takes 5 minutes to make and is 100% better than any store bought dressing.

Ingredients
  

  • 4 large Kale leaves chopped and stems removed
  • 1 large Carrot shredded
  • 8-10 Grape Tomatoes halved
  • 1 Avocado diced
  • 1/2 cup dried Cranberries
  • 1/2 cup chopped Walnuts

Instructions
 

  • Wash and prepare veggies.
  • Add Kale leaved to large bowl and massage for 30 seconds, this makes the Kale a little softer.
  • Add Carrot, tomatoes, avocado, cranberries, and walnuts.
  • Mix well.
  • Pour Balsamic Vinaigrette over salad and stir well.
