It’s Friiiidayyyy! Which means it’s time for me to head down to the beach after work with some friends and do a little tailgating before the summer concert on the beach in Daytona! I will definitely be bringing these Peach Caprese Salad Bites!

I love the summer concerts at the bandshell in Daytona Beach. Every Friday and Saturday night during the summer they host a free outdoor concert which looks out over the beautiful sandy beach.

The concerts they have here are usually 80s cover bands. Yes I’m a child of the 80s and lover of 80s Rock. 🙂 Tonights concert was Van Halen and Kiss, which was sooooo Rad! Did I just say Rad? Ahhhh the 80s!

Daytona Beach is one of the few beaches in Florida where you can actually drive and park your vehicle on the beach, it’s so cool!

Wine on the beach

I like to spend a few hours with friends at the beach tailgating before walking up to the bandshell to see the concert.

And of course since I love food and wine, I like to bring these new Single-Serve Stacked Wines from Woodbridge by Robert Mondavi Chardonnay & Cabernet Sauvignon to serve along with my appetizers.

This wine is perfect to bring along when you’re tailgating with friends.

Here’s what I love about this wine:

  • The cups are plastic so it’s perfect to bring to the beach or any outing
  • It is good quality wine in a convenient single serve cup
  • It’s perfect for sharing with friends
  • It pairs well with any appetizer or meal

Since I was just in California wine country a few weeks ago, I was inspired to make an appetizer that I tried there for the first time. A Peach Caprese Salad!

Honestly I had never thought of using Peaches in a Caprese Salad before. But when I took my first bite, it was like a taste explosion in my mouth!

I decided to tweak it just a bit to make it more versatile so I could bring this salad on the go to share with my friends.

You guys, this has to be one of the easiest, elegant looking appetizers ever! You’re friends will be impressed with this one. 🙂

Peach Caprese Salad Bites

I started off with one Peach. I peeled it because I’m not a fan of the texture the skin of a Peach has. I cut it in half and removed the pit. Then I cut each half in half again and sliced it to make 24 bite size pieces.

I took some toothpicks and added to each, one Peach slice, one Basil Leaf, and one Mozzarella Ball. This made 24 delicious little appetizers.

Then I drizzled some Honey over the Peach Caprese Salad Bites. OMG…me and my friends were in foodie heaven over these! The sweetness from the Peaches and the Honey mixed with the flavor of the Basil and Mozzarella were so delicious.

I paired this with Woodbridge by Robert Mondavi Chardonnay & Cabernet Sauvignon. Yep, this was the perfect pairing!

These Peach Caprese Salad Bites are an easy appetizer to take on-the-go or for tailgating!

Ingredients

Scale
  • 1 large ripe Peach
  • 24 Basil leaves if they are large, you can cut them in half
  • 24 mini Mozzarella Balls
  • 1 Tbs Honey
  • 24 toothpicks

Instructions

  1. Wash and remove skin from Peach, cut in half and remove pit.
  2. Cut Peach into 24 bite size pieces.
  3. Take each toothpick and add one Mozzarella Ball, one Basil Leaf, and one Peach.
  4. Repeat with all 24 toothpicks.
  5. Line up the appetizers on a plate or platter.
  6. Drizzle Honey over the top.
  7. Enjoy!

    I was just on vacation last week and was 1) so happy that Florida (and all the rest of the US besides the state I live in) sells wine in major grocery stores and 2) that these wines exist. You can bet we picked some up for the trip 🙂 And these bites look like an amazing flavor combo too!

    Peach Caprese Salad… yumm! It’s always fun to be on the beach. I was in Cape May, New Jersey with my family all of last week and hang out on the beach everyday while we were there and we had a blast! 🙂
