This Slow Cooker Chicken and Rice Soup with Lemon is so hearty, healthy, and flavorful! This is true comfort food!

Slow Cooker Chicken and Rice Soup with Lemon

The temperatures have dropped here in Florida… yes it does get cold here in January. 🙂 Which means I have been all about the comfort foods lately. 

Making homemade soup has been on repeat weekly lately since I’ve been making my own Chicken Stock in the Instant Pot and freezing bags of it to make soup with. 

Seriously, if you have an Instant Pot (affiliate link) and have never made homemade broth or stock, you must try this! It’s great because YOU control what goes into your broth/stock such as sodium etc. and it tastes so much better than store bought. Plus it saves $$$ win win!

Slow Cooker Chicken and Rice Soup with Lemon in a bowl

Alright, let’s get into this recipe!

Here’s what you need:

  • 1 1/2 lbs Boneless Skinless Chicken Breasts
  • 1 large Sweet Onion chopped
  • 5 Garlic Cloves finely chopped
  • 2 cups chopped Carrots
  • 2 cups chopped Celery
  • 1 Tbs dried Parsley
  • 1 Tbs dried Thyme
  • 4 Bay Leaves
  • 1 tsp Sea Salt
  • 1 tsp Black Pepper
  • 6 cups Chicken Broth
  • 1 cup Arborio Rice
  • 1/4 cup fresh Lemon Juice
Slow Cooker Chicken and Rice Soup with Lemon

Add the Chicken, Carrots, Celery, Onion, Garlic, Chicken Broth, Parsley, Thyme, Bay Leaves, Salt, and Pepper to a slow cooker. Cover and cook on low 6 hours or high 3 hours.

Remove the Chicken and shred with a fork until bite size pieces are created, add back to slow cooker. Remove Bay Leaves and discard. Add in the Rice.

 

Cover and cook 1/2 hour more. Stir in Lemon Juice (Note, start with a little bit at a time until desired taste. I like mine very lemony so I used 1/2 cup).

Then proceed to cozy up to a big bowl of this delicious comfort food! Serve with your favorite crusty rustic bread or crackers!

Ingredients

Scale

Instructions

  1. Add Chicken, Carrots, Celery, Onion, Garlic, Chicken Broth, Parsley, Thyme, Bay Leaves, Salt, and Pepper to a slow cooker.

  5. Add Rice
  6. Cover and cook 1/2 hour.

  8. Serve immediately.
  9. Enjoy!

Notes

Note: if the rice absorbs too much liquid you can add more broth and reheat.
