These Tuna Sushi Stacks are super easy and fun to make! Made with Sushi Rice, Avocado, Cucumber, canned Tuna and topped with Spicy Mayo for the win!
If you didn’t know this already, I am a HUGE sushi lover! Seriously I could eat this every single week and never get sick of it.
The thing is, is that eating out at sushi restaurants all the time can get pretty expensive. So I like to make my own version at home, while maintaining my budget.
There is no shame in using canned Tuna my friends. It’s also easy on the wallet! I do however splurge for the wild caught Albacore Tuna which tastes so much better than the cheap cans of tuna.
To make these, just spray a 1 cup dry measuring cup with cooking spray. This will make it easier to lift off after filling.
Then fill the first layer with 1/4 cup of Tuna.
Then add 1/4 cup Cucumber on top of the Tuna.
Next spoon the mashed Avocado over the Cucumber, again each layer is about 1/4 cup deep for even layers.
Finish by topping it with the cooked Sushi Rice. I like to gently press down on the rice to make sure everything gets nice and set in.
Then carefully flip your measuring cup onto a board or plate.
Slowly lift the measuring cup off and… Wallaaaaaah now you have a perfect Tuna Sushi Stack!
But don’t just stop there. Top it with some Sriracha Mayo and Sesame Seeds! And throw in some Japanese Pickled Ginger and Wasabi to go with it!
There you go, now you have delicious, affordable sushi made right at home.

Ingredients
- 1 cup dry Sushi Rice
- 2 Tbs Rice Vinegar
- 5 oz can Albacore Tuna drained
- 1 English Cucumber diced
- 2 Avocados mashed
- Olive Oil non-stick spray
Topping ideas:
- Sriracha Mayo
- Sesame Seeds
- Pickled Ginger
- Wasabi
- Tamari (gluten free soy sauce)
Instructions
- Prepare Sushi Rice as directed on package
- Let cool for 10 minutes, add Rice Vinegar and mix in
- Place the Rice in the fridge to cool (you can prepare this the night before to save time)
- Using a 1 cup dry measuring cup, spray lightly with cooking spray
- Layer 1/4 cup of Tuna, then 1/4 cup Cucumber, then 1/4 cup Avocados and top with Sushi Rice
- Carefully turn the cup upside down on a plate and tap the bottom of the cup gently
- Lift cup off of the stack and serve with your desired toppings
- Enjoy!
Notes
Sushi Rice works best, if you can’t find it you can use another type of sticky rice as a substitute.
