Cheesy Quinoa Zucchini Fritters

These Cheesy Quinoa Zucchini Fritters are super easy to make and loaded with so much goodness! I made a homemade Lemon Mayo Sauce that is perfect for dipping these into!

I love a good fritter. They are just so versatile, you can make them from meat, seafood, fruit and veggies.

This was my first. time making a fritter with zucchini, and man oh man I have to say wowza! These turned out so delicious!

AND if you have picky eaters at home it’s also a great way to sneak in some veggies!

Here’s what you need to make these Cheesy Quinoa Zucchini Fritters:

  • 1/2 cup uncooked Quinoa
  • 1 cup Water
  • 3 Medium Zucchinis Grated
  • 2 Eggs
  • 4 Garlic Cloves Minced
  • 1 Tbs Dried Oregano
  • 1 cup Freshly Grated Parmesan Cheese
  • 1 cup Gluten Free Panko
  • 1/2 tsp + 1/2 tsp Sea Salt divided
  • 1/2 tsp Black Pepper
  • 3-4 Tbs EVOO

You can make the Quinoa ahead of time and store it in the fridge to make things easier. Just add Quinoa and Water to a medium sauce pan and cook according to package directions.

Place grated Zucchini in a colander over the sink and sprinkle with 1/2 tsp Sea Salt, let it sit for 10 minutes.

Squeeze as much of the water out of the Zucchini as you can with your hands. Then place the Zucchini on paper towels or a large dish cloth and squeeze the rest of the water out. It’s super important to get as much water as you can out of the Zucchini so it’s not soggy.

Place the Zucchini in a large bowl, then add in Quinoa, Eggs, Garlic, Oregano, Parmesan, Panko, 1/2 tsp Sea Salt, Pepper, and mix well.

Add EVOO to a large frying pan and heat over med/high heat. Once oil is shimmering, form the Zucchini mixture into 2-3 inch patties and place in the frying pan. Cook 4-5 minutes each side until crispy.

Place on paper towels once cooked to drain any additional oil.

Now, can we just talk about this Lemon Mayo Sauce for a minute? This sauce is the perfect pairing to these fritters!

All you need for the sauce is:

  • 1 Lemon Zested and Juiced
  • 3/4 cup Mayo
  • 1 Garlic Clove Minced
  • 1/2 tsp White Vinegar
  • 1 tsp Dijon Mustard
  • 1/2 tsp Dried Oregano
  • 1/2 tsp Dried Thyme
  • Sea Salt and Pepper to taste

Then just mix it all together and serve!

Ingredients

For the Zucchini Fritters:

  • 1/2 cup uncooked Quinoa

  2. While Quinoa is cooking prepare the rest
