Let’s talk about this Healthy Coconut Strawberry Banana “Ice Cream” shall we! This is so easy to make using frozen Strawberries, Bananas, and some Coconut Milk Powder to keep it Dairy Free.
Honestly this tastes just like Ice Cream but without all the guilt!
I have a habit of freezing my fruit when it starts getting a bit too ripe. I don’t like letting anything go to waste, so I freeze it up and use it for my smoothies in the morning.
One day as I was pulling out some frozen Bananas for my morning smoothie I got to thinking… ‘hey, I bet I could make a healthy dessert using some of this frozen fruit’!
So I added some frozen Bananas, frozen Strawberries, and some Coconut Milk Powder to my food processor to blend up!
Now Coconut Milk Powder is perfect to use for this yummy dessert. I thought about using regular Coconut Milk, but I knew if I did that it would melt the frozen fruit too fast.
I actually found this yummy Coconut Milk Powder online. It’s great because it’s Organic, Non-GMO, and hey it’s a Superfood!

Now after your food processor has mixed everything up, it will have the consistency of soft serve Ice Cream.
If you want it a little harder, just add it to a freezer container and put it in the freezer for about an hour.
I topped this with some Coconut Flakes for a little more Coconut flavor.
This is simply one of the best healthiest desserts I think I’ve ever made.
Oh and it’s kid approved, or should I say teenager approved! I keep forgetting my son is no longer a kid and is now a teenager.
Anyway, he loves this yummy dessert!

Ingredients
- 3 frozen Banana sliced
- 1 cup frozen Strawberries
- 1/2 cup Coconut Milk Powder
- Unsweetened Coconut Flakes for garnish
Instructions
- Add all ingredients to a Food Processor or high speed blender.
- Blend until smooth and creamy.
- This will be the consistency of soft serve ice cream, if you want it harder, freeze in a freezer container for an hour before serving.
- Sprinkle with Coconut Flakes
- Enjoy!

Is there a substitute for the Coconut Milk Powder that I can use?

Coconut Milk Powder works best for this, however if you’re in a pinch and don’t have any, you could omit this. You would lose out on the Coconut flavor though.

I use frozen fruit all the time for my smoothies & if I make more than a glass full (which happens all the time), then I pour into a container & refreeze it… it’s normally just enough for a late night treat!! Yum!

What do you mean by 3 frozen banana slices?

I pre sliced 3 frozen Bananas and then put them in the freezer. When they are sliced up it’s easier to mix them into the food processor.

I have found my blender won’t blend unless there is liquid to get these moving, so would you then use coconut milk instead?

You could try adding a little at a time, but you may need to re-freeze.

I had skme leftover coconut milk that I used in this recipe. It waz good. I would call it more of a sherbet. It froze well and was equally good gthe second time around.

I tried it, I had to throw some flaked coconut in there too because someone in my house used my extract and I didn’t know it so didn’t have much left. I had to add a little almond milk to make it the right consistency but it was SOOOOO good

Although it looks delicious, and i’m sure it taste good, keep in mind, Fruits are not as healthy, as they’re made out to be! It is just Sugar, the Vitamins and Minerals you can get elsewhere!

You do realize that someone with diabetes this is not a healthy alternative. Hi Sue I just wanted to make you aware that while there is a lot of sugar in fruit it is almost completely canceled out due to the fiber in them as well. Fruit is extremely healthy and because of the fiber the sugar in fruit won’t make your blood sugar spike and then drop like a candy bar would.

Thank you for the recipe. IMO fruit in moderation is healthy for you. I would much prefer to get my nutrients from whole foods than from a bottle. Healthy doesn’t mean it is good for 100% of the people. Everyone needs to take responsibility for their own health needs.

Hi Sara! Just tried the healthy “ice cream” tonight! It came out fantastic and I’m not a good cook. Next time I will halve the recipe because I have a 4 cup food processor. I had too much food in it so I had to take some out. Also, I took the cut up fruit out of the freezer and immediately processed it. I had to use extra coconut milk powder and also added coconut milk about 1/4 c because everything was too frozen. It was very delicious though. My husband loved it! Next time, tomorrow night, I will include chunks of stevia sweetened chocolate in the food processor to see how it tastes with chocolate chips.

Well it doesn’t usually last long in our house, lol! But if stored in an air tight freezer container it will be good up to a week.

1/4-1/2 cup Black beans would be a great substitute, and it would ramp up the protein content as well. Or you could also use an avocado if you’d prefer.

When we have tried making ice cream with coconut milk & frozen fruit in our VitaMix leftovers turn really hard & chunky when frozen overnight. Will the powder keep it from doing that?
