Easy Skillet Brownies (Gluten Free)

These easy skillet brownies (gluten free) are super easy to make and will melt in your mouth! This will seriously be your new favorite dessert!

Ok you guys, seriously I cannot stop shoving bite after bite of these super chocolaty, delicious Skillet Brownies into my mouth! These brownies are soooo easy to make, and guess what…they’re Gluten Free!

Yep, I am putting everyone to the test who says Gluten Free baking can’t taste good. I Dare you to try this recipe and then tell me you don’t LOVE it! Yes – challenge on!

 

So if you’ve been following the blog for a while, you may have noticed I’ve been making a lot of meals in a Cast-Iron Skillet. I totally love my skillet and am always trying to think of different things to make in it. I’ve heard of people making dessert in a skillet and I aways thought that sounded super cool to try.

Using a Cast-Iron Skillet to bake or cook with always makes me feel nostalgic. It feels like I should be back home in my old small town in Minnesota, living in the country again. Growing up, my mom cooked with a Cast Iron Skillet a lot. She was an amazing cook and baker. When I was little I would always be in the kitchen helping her with baking.

Unfortunately she was diagnosed with Cancer and didn’t make it through. I was 12. So from age 12 on, I was left to figure out how to cook and bake on my own. I had all her old cookbooks and hand written recipes past down from generation to generation. I still have them to this day.

I was digging through the pile of old recipes and came across an old favorite that she used to make all of the time. She called them Dump Bars, because basically you dump everything into a bowl, mix and then bake it. Easy.

I decided to put a new spin on my moms old recipe and make it Gluten Free, AND use a Cast Iron Skillet instead of a baking pan. Ok I was a little nervous since this was my first time baking a dessert in a skillet. But it turned out amazing! I think she’s smiling down on me right now.

Here’s what I love about these brownies:

-They are so moist and ooey gooey with so much chocolaty goodness – heavenly!

-This is super easy to make, seriously. Requires only 1 bowl and 1 skillet.

-It’s Gluten Free, so it won’t leave you feeling bloated and sick after eating. (Unless you eat the whole pan in one sitting…then you might have a slight tummy ache.) 😛

These easy skillet brownies (gluten free) are super easy to make and will melt in your mouth! This will seriously be your new favorite dessert!

Ingredients

Units Scale
  • 1 cup Truvia white sugar, if you use regular sugar you will need to double it
  • 1 3/4 cup Almond Flour
  • 5 Eggs
  • 1 tsp Sea Salt
  • 1 cup Coconut Oil melted
  • 1 tsp Vanilla extract
  • 1/2 cup Cocoa powder
  • 1 cup Chocolate Chips

Instructions

  1. Preheat oven to 350 degrees.
  2. In 9 inch cast iron skillet, lightly grease bottom and sides with 1 Tbs Coconut Oil.
  3. In large bowl add all ingredients except chocolate chips.
  4. Mix until moistened.
  5. Add mix to skillet.
  6. Sprinkle chocolate chips on top.
  7. Bake 40 minutes.
  8. Enjoy!
