The temperature is finally starting to drop here in sunny Florida, and it’s finally starting to feel like Fall! Woohoo! Cooler temps mean only one thing… soup weather!
This was actually my first time making this Sausage and Kale Soup with Arborio Rice. When I took my first bite… OMG I was in foodie heaven! Seriously SO delicious and flavorful!! My son, who’s also my best food critic gobbled this soup right up.
This is definitely a new favorite in our household. It’s super simple to make too.
Add 2 Tbs of EVOO to a 6 quart dutch oven and heat over med/high heat. When oil starts to shimmer add in the Turkey Sausage and cook 5-7 minutes or until Turkey is fully cooked through. Remove the Turkey and set aside.
Add 2 more Tbs of EVOO to the dutch oven. Then add the Onions, Garlic, Carrots, and Thyme. Sauté 3-4 minutes until slightly softened.
Add Chicken Broth, RiceSelect Arborio Rice, Bay Leaves, Salt, and Pepper. Bring to a simmer and cook 10 minutes with the lid slightly on.
Remove Bay Leaves, then add in Turkey and Kale. Cook 5 more minutes with lid slightly on, until Rice is fully cooked.
I highly recommend using RiceSelect Arborio rice in this recipe. I use this brand all of the time because it’s Non-GMO, free from artificial ingredients, flavors, and preservatives and presented in a BPA-Free Plastic Jar, which are all super important to me.

Sausage and Kale Soup with Arborio Rice

Ingredients
- 1 cup RiceSelect Arborio Rice
- 1 lb Sweet Italian Style Turkey Sausage chopped into 1 inch size pieces
- 6 cups Chicken Broth
- 4 Tbs EVOO divided
- 1 cup chopped Carrots
- 1 cup chopped Sweet Onion
- 2 cloves chopped Garlic
- 1 Tbs fresh Thyme
- 2 Bay Leaves
- 3 cups chopped Kale leaves stems removed
- 1 tsp Sea Salt
- 1/2 tsp Black Pepper
Instructions
- In 6 qt Dutch Oven add 2 Tbs EVOO and heat over med/high heat
- When oil is shimmering add Turkey Sausage and cook 5-7 minutes or until cooked all the way through
- Remove Turkey and set aside
- Add 2 Tbs EVOO to Dutch Oven
- Add Carrots, Onion, Garlic, and Thyme
- Sauté 3-4 minutes until slightly softened
- Add Chicken Broth, RiceSelect® Arborio Rice, Bay Leaves, Salt, and Pepper
- Bring to a simmer and cover most of the way with a lid
- Simmer 10 minutes stirring occasionally
- Remove Bay Leaves and discard
- Add Turkey Sausage and Kale
- Cook with the lid partially on 5 minutes stirring occasionally until rice is fully cooked
- Serve and enjoy!
Notes
If rice absorbs too much liquid add more broth to the soup and reheat.
