Spaghetti Squash Pizza Boats

These Spaghetti Squash Pizza Boats are super fun to make! You can add any of your favorite pizza toppings you like! We made a pepperoni as well as a Margherita pizza.

Pepperoni Spaghetti Squash Pizza Boat

It’s almost Fall… I pretty much consider all of September Fall. 🙂

That means it’s squash season! This is literally my favorite time of the year, because I love cooking with squash. 

 

I know you can cook with it all year, but depending on where you live it’s not always easy to find at the grocery store.

I was craving pizza the other day, but didn’t have anything to make the crust with. I noticed I had 2 large Spaghetti Squash sitting on my counter, so I thought ‘hey why don’t I experiment with these!’

I made a simple sauce with Strained Tomatoes, fresh Basil, and Red Wine Vinegar. Then mixed it into the cooked Spaghetti Squash.

Topped one with Mozzarella and added fresh Basil after cooking which was soooo yummy! Topped the other with Mozzarella and Pepperoni which my boyfriend loved! He actually told me this was better than pizza!

I definitely recommend putting down parchment paper on your sheet pan before cooking these. It’ll save you so much time during cleanup!

If you wanted to mix things up, you can stuff or top these with any of your favorite pizza ingredients. Like Olives, Peppers, Onions, Anchovies, cooked Sausage, Mushrooms etc.

I mean the possibilities are endless!

Spaghetti Squash Pizza Boats

These Spaghetti Squash Pizza Boats are super fun to make! You can add any of your favorite pizza toppings you like! We made a pepperoni as well as a Margherita pizza.

Ingredients

  • 1 large Spaghetti Squash
  • 2 Tbs EVOO
  • 1/4 tsp Sea Salt
  • 1/4 tsp Black Pepper
  • 1 cup Italian Strained Tomatoes
  • 2 – 3 Tbs fresh Basil chopped (you can substitute with 2–3 tsp dried Basil)
  • 1 tsp Red Wine Vinegar or Balsamic Vinegar
  • Mozzarella shredded and your favorite pizza toppings

Instructions

  1. Preheat oven to 400 degrees.
  2. Wash and cut Spaghetti Squash lengthwise in half.
  3. Scoop out seeds.
  4. Brush inside of Squash with 2 Tbs EVOO.
  5. Sprinkle with Salt and Pepper.
  6. Place Squash insides down on a parchment lined baking sheet.
  7. Bake 20-25 minutes until inside of Squash pierces easily with a fork.
  8. Take a fork and scrape the insides of the Squash out creating ‘Spaghetti noodles’.
  9. Mix together the Strained Tomatoes, Basil, and Red Wine Vinegar
  10. Add the sauce and mix into the Spaghetti Squash
  11. Top with Mozzarella and your favorite toppings
  12. Bake 10-15 minutes or until cheese is nice and bubbly
  13. Enjoy!
