This Caribbean Sunshine Smoothie is packed with Vitamin C. I used all of my favorite ingredients that are inspired from the Caribbean drinks I’ve had and blended it all into a healthy smoothie.

It’s been feeling very tropical all summer here in Florida. The summer heat in Florida reminds me of being in the Caribbean. I love the heat, and drinking this Caribbean Sunshine Smoothie is just the pick me up I needed today!
I used Unsweetened Coconut Milk to make it dairy free. Plus I think using coconut milk makes it taste more tropical. I also added Mangos, Pineapple, Banana, Coconut Flakes, and Chia Seed Gel.
Chia Seed Gel can be stored in your fridge for up to 2 weeks in a glass jar with a lid. I use a mason jar.
To make the Chia Seed Gel, simply add 1/4 cup of Chia Seeds to 2 cups of water. Stir a bit to mix it in, then let it sit for at least 5 minutes before adding to smoothies. Then store the rest in the fridge. See you guys, it’s super simple! You can just add the Chia Seeds dry to smoothies, but I find it’s easier to digest when it’s in a gel form.

I suggest making this smoothie and sitting pool side while drinking it.
But if you don’t have a pool or it’s cold outside, then just pretend you’re in the tropics. I used to do that all of the time when I lived in Minnesota. When it was cold outside I would have pretend ‘tropical days’, where I would make food and drinks that reminded me of being in the Caribbean. For me it was a way to cope with the cold weather. Don’t judge, give it a try!

Caribbean Sunshine Smoothie
Ingredients
- 1 1/2 cups Unsweetened Coconut Milk
- 1 Banana
- 1 Mango peeled and cored
- 1/2 cup Pineapple
- 1/4 cup unsweetened Coconut Flakes
- 2 Tbs Chia Seed Gel see instructions for soaking Chia Seeds
Instructions
- Add all ingredients to blender and blend until smooth, about 30 seconds.
- Enjoy!
- *To soak Chia Seeds, combine 1/4 cup Chia Seeds to 2 cups water and let sit for 5 minutes.
- You can do this ahead of time and store in glass jar with a lid for up to 2 weeks. That way it’s available whenever you make a smoothie. 🙂
- *You don’t have to soak Chia Seeds, but I find it’s easier to digest.
