I don’t know about you, but I’ve been doing a lot of grilling at home lately. The weather is warming up fast and I just have preferred grilling over oven cooking most days.

I love grilling because you can cook most foods especially like chicken in way less time than it takes to cook it in the oven.

Plus you get those nice grill marks! 🙂

I have a small stand up garden bed that I started this year. I planted several herbs including mint, which is growing like crazy right now!

I seriously cannot keep up with how much mint is growing! So basically having an abundance of mint inspired this recipe!

I made a simple marinade with Mint, White Cooking Wine, EVOO, Lemon Zest, and Sea Salt.

You want to marinate the chicken for at least 30 minutes, or up to 2 hours. The longer you marinate, the more flavorful it will be.

Heat your grill to 450 degrees. Place chicken on the grill and cover for 8 minutes. Flip and cook 8 minutes more.

Place chicken on a platter and cover with aluminum foil for 10 minutes. This allows the chicken to cook further while keeping it tender and juicy inside.

Note: Cook time will vary depending on how thick your chicken breasts are. I use organic ones which typically are on the smaller side. Always cook chicken until the thickest part of the breast reaches an internal temperature of 165 degrees.

Ingredients

Scale
  • 1 1/2 lbs Boneless Skinless Chicken Breasts

For the marinade

  • 1/4 cup White Cooking Wine
  • 1/4 cup EVOO
  • 2 Tbs chopped fresh Mint Leaves
  • Zest of 1 Lemon (about 2 Tbs)
  • Juice from 1 Lemon (about 2 Tbs)
  • 1/4 tsp Sea Salt

Instructions

  1. Combine all ingredients of the marinade in a small bow and whisk together
  2. Place Chicken in a large ziplock bag
  3. Pour marinade over Chicken, seal bag, and refrigerate at least 30 minutes or up to 2 hours
  4. Heat grill to 450 degrees
  5. Remove Chicken from bag and place the Chicken on the grill
  6. Cover and cook 8 minutes
  7. Turn the Chicken over and cook 8 minutes
  8. Place Chicken on a platter and cover with aluminum foil, let rest 10 minutes
  9. Slice Chicken and serve
  10. Enjoy!

Notes
