Easy Lentil Fritters

Easy Lentil Fritters are perfect for a snack or a meal! It’s such a great way to use up those leftover cooked lentils!

I had a bag of Lentils that was about to expire so I was thinking of ways to use them up. Usually I use them in Salads, Chili or as a fill with meat in Tacos.

But I wanted something different, something I could snack on. So I did some experimenting and came up with these yummy Fritters!

All you need to make this is:

  • 1 Cup Cooked Lentils
  • 1 Clove Minced Garlic
  • 1 tsp Smoked Paprika
  • 1/2 tsp Ground Cumin
  • 1/4 tsp Sea Salt
  • 1/4 tsp Black Pepper
  • 1 Egg
  • 1/2 cup Gluten Free Panko
  • Coconut Oil for frying
Easy Lentil Fritters

In a food processor blend together Lentils, Garlic, Paprika, Cumin, Salt and Pepper. Remove blade and stir in the Egg and Panko (I used a gluten free panko).

Form into small balls. Add enough oil to a large frying pan to cover the bottom. Heat on med/high heat. When oil starts to shimmer add the Lentil balls to the pan.

Gently press them down to make them flatter, about 1/4 to 1/2 inch thick. Cook 5 minutes each side or until desired crispiness. 

Grabbing a Lentil Fritter

For the Dipping Sauce combine Mayo, Smoked Paprika, Chili Powder, Cumin and Lime Juice together. Omg you guys, this sauce is soooo good!

Ingredients
  

For the Lentil Fritters:

  • A few drops of Lime Juice

    Very, very Good! Will make again. I think taco seasoning would be good. I wonder if some corn would work in these, too. The mixture was a little runny, by after sitting a minute or two became more thick. I used tablespoonfuls to put in pan and flatten. Sauce was yummy, too.
